    I love soup :) Hate the winter and the cold, but I still look forward to it because I can make huge pots of soup night after night and not get a single complaint!

    How timely is this? I just bought a pressure cooker and soup is my first priority. My mom always cooked with one, but I never bothered. But with this winter and the extreme cold (though the January thaw has been lovely), and an Amazon gift certificate, I broke down. I’d thought about a slow cooker, but I’m not home during the day and the thought of working with a pressure cooker makes me less nervous than leaving something cooking all day. I’m so excited to have recipes I can adapt to the pc!

        I used it for the first time today. I made a whole chicken with rosemary. There’s definitely a learning curve. My chicken was larger than the recipe called for and the instuctions said to add 10 minutes to the cooking time (35 minutes vs. 25). The resulting chicken was falling off the bone. Probably could have kept the original cooking time. My initial plan was to cook the chicken for dinner and use the bones for soup. Well, pressure cooking left the bones soft and depleted. However, that meant the resulting sauce was very rich and flavorful. It was finished with butter and a splash of lemon juice. The whole thing was absolutely delicious, even with the learning curve in the results. The sauce was so good that I’m looking forward to making stock. I think it will be amazing. Also looking forward to pulled pork and beef short ribs. Real winter food. It’s a keeper!

    Keep these fantastic soups coming! We’re having a winter that is requiring warming up from the inside out as well as outside in…and soup is on our menu a lot!

    A good blender is a MUST for silky soups – I just made a red curry thai butternut squash soap, and after blending the base of the soup, loaded it in with veggies and a handful of chopped shrimp – perfect for these cold winter days!

    I purchased a pressure cooker a couple of months ago and just love it. It cooks a meal fast and yet it is tastier than ever, and I really love the one pot clean up…lol I love to make homemade soup and am going to try this…would absolutely love winning a Vitamix. Thanks for the opportunity!
