15 Fantastic Low Carb Soup Recipes

Soup is the ultimate form of comfort food. I don’t care where you are or what you’re doing in life, there are just times that call for a hot bowl of soup. When you’re exhausted after a hard day’s work, when you’ve spent hours in the rain watching your kid’s soccer game, when you’ve spent the day caring about everyone else’s problems but your own, you want soup. Eating soup is like reverting back to the best of your childhood, where you felt loved and cared for and you knew you could relax and just be yourself. There’s a good reason they call it “Chicken Soup for the Soul” and not, say “Garden Salad for the Soul”. There’s nothing wrong with salad. Salad has its place in the world. But salad is not soup and it never will be.

Soup lends itself so well to low carb variations that I’ve collected 15 of the best low carb soup recipes I could find. More specifically, I rounded up 15 of the best blended low carb soup recipes, because A Sweet Life is giving away a Vitamix for you to be able to make all these wonderful soups at home. In case you hadn’t heard, Vitamix is supposed to be the ultimate in blending technology and it’s perfect for getting your favourite soups creamy and smooth.

  1. I love soup :) Hate the winter and the cold, but I still look forward to it because I can make huge pots of soup night after night and not get a single complaint!

  2. How timely is this? I just bought a pressure cooker and soup is my first priority. My mom always cooked with one, but I never bothered. But with this winter and the extreme cold (though the January thaw has been lovely), and an Amazon gift certificate, I broke down. I’d thought about a slow cooker, but I’m not home during the day and the thought of working with a pressure cooker makes me less nervous than leaving something cooking all day. I’m so excited to have recipes I can adapt to the pc!

    • You’ll have to tell me how you like the pressure cooker, I’ve been interested in trying one.

      • I used it for the first time today. I made a whole chicken with rosemary. There’s definitely a learning curve. My chicken was larger than the recipe called for and the instuctions said to add 10 minutes to the cooking time (35 minutes vs. 25). The resulting chicken was falling off the bone. Probably could have kept the original cooking time. My initial plan was to cook the chicken for dinner and use the bones for soup. Well, pressure cooking left the bones soft and depleted. However, that meant the resulting sauce was very rich and flavorful. It was finished with butter and a splash of lemon juice. The whole thing was absolutely delicious, even with the learning curve in the results. The sauce was so good that I’m looking forward to making stock. I think it will be amazing. Also looking forward to pulled pork and beef short ribs. Real winter food. It’s a keeper!
