4th Anniversary and a Swerve Giveaway!

Yum

All Day I Dream About Food turns 4 years old today! HAPPY BIRTHDAY, little bloggity-blog! And Swerve Sweetener is kindly offering you a chance to win fun prizes to celebrate. Plus 10 of my best low carb, gluten-free cake recipes.

4 year giveaway

I feel that I should wax poetic, make a big speech about my blog and everything it means to me. How it all started out on a whim, how I never expected anyone to be paying any attention and how amazed I am that I’ve built this baby into a full-time profession. All of which is very true. But more to the point, I am amazed by my readers; their loyalty and love is astonishing and keeps me going, even when times get tough. Every day, I get emails from people telling me that my recipes helped them stick to a healthier, low carb lifestyle. They thought they were destined for boring food and no sweet treats and having to rely on sheer willpower, and anyone who’s ever tried a diet knows how that goes! So I suppose you might say I have made it my life’s mission to turn that idea on its head. It started out with a selfish purpose, since I didn’t want to be stuck with boring food, no sweet treats and relying on sheer willpower to keep diabetes at bay. But it’s turned into so much more than that, a veritable community of people with the same goal: creating healthy and delicious food.

And Swerve Sweetener has generously offered to help me celebrate by donating a prize pack of goodies for you to create lovely low carb goodies at home. 4 of everything, including some of the coveted confectioner’s Swerve that’s been out of stock for a while. YAY! Check it out…

Besides a speech, I have the distinct feeling I should have made my blog a cake. Except my blog doesn’t have a mouth. I have a mouth, my husband has a mouth and my kids have mouths and we can do a cake some serious justice in this house. We ain’t afraid of no cake! But it seems kind of cruel to bake a cake for a blog that can’t eat it. However, in case YOU are in the mood to bake a cake for my blog, or you or someone you know has a birthday coming up, here are 10 of my best low carb cake recipes. All of which are perfect for celebrating a birthday, real or virtual! Any excuse to eat cake, right?

  2. Katharine says

Congrats, Carolyn! All of us out here living with the restrictions of blood sugar are SOOO appreciative of not only your delicious recipes, but also the research you do and knowledge you have about health and which products are good, etc. You are a trustworthy and adorable source for amazing low carb goodies. Thank you! I need to make the pumpkin cake with brown butter icing. How has this escaped me until now!? And drooling over the chocolate cake with sour cream icing. I need to make some practice cakes for my upcoming 40th bday. :)

Happy blog anniversary! I don’t have a website but I love using your recipes as inspiration for cooking/baking. As a Registered Dietitian, I love that you use erythritol in so many recipes – it is my favorite natural sweetener! It is the best alternative in terms of baking characteristics, nutritional profile, and (maybe most importantly) lack of GI upset as with other sugar alcohols due to its absorption mechanism. So, thank you for developing great recipes using this awesome ingredient!

If I were to win the package, I’d definitely try to make low carb cinnamon rolls, maybe even pumpkin cinnamon rolls!

  4. Jamie Rebecca says

Happy Anniversary!!!! Seriously chocolate cake and sour cream icing is just screaming my name! You just had to tease with all these pictures!!

Congratulations Carolyn – and I sure wish I’d found you four years ago! I’ve been eating this way for a few years now and your recipes are definitely my favourites. There are so many I love, but the Brownie Cheesecake was to die for….. The only complaint I have is that since I live alone, I end up eating the same cake for a few weeks – even though I freeze portions – sigh…

Thanks for the recipes, the introduction to a healthier way of baking and – not exaggerating here – the restoration of a beloved hobby and essential part of who I am. Thanks!

I love Swerve and have a huge list of “goodies to try” but I think the chocolate eclair cake is at the top of the list as it looks decadent and perhaps a bit challenging. Can’t wait to try the custard.

  26. Rebecca E says

Chocolate Chip Cookies!! I make a big batch, scoop the dough into little balls of yumminess and freeze them. When I’m cooking dinner at night (or reheating leftovers HA) it’s easy to set a couple out to thaw. By the time dinner’s over we have wonderful fresh hot chocolate chip cookies. Congratulations on the anniversary. Thanks for all you share!

  34. Catherine says

Congratulations on your 4th year anniversary. This is an amazing site! I have made quite a few of your recipes and recommended this site to everyone that shows any interest in low carb, gluten free or sugar free recipes. My favorite was the pumpkin spice cake. There I learned what whey powder can do for the structure in gluten free baking. Thank you Carolyn for all the wonderful recipes and knowledge that you share! Here’s to another 4 years and beyond!

  35. says

Happy anniversary Carolyn. I am a devoted follower. I think I like baking your way better than eating “regular” baked goods. I’ll use swerve to make some yummy chocolate treats … Maybe brownie donuts.

  37. staci mccarthy says

Me again, forgot to say that I want to make the dark chocolate peanut butter cake, and serve it with your updated recipe of chocolate peanut butter ice cream. Might be overkill or chocolate peanut butter bliss.

    • P.J. Stietz says

And thanks for introducing me to Swerve! We love it and use it in all our desserts now. I just made your coconut cake and already my hubby is asking for more…having four bags of sweetener will keep us in cake for a while.

  59. says

I would make a delicious cheesecake for my family and one for my coworkers. They always love the food I make for them. I try my best to help everyone eat healthy.

  60. Rica says

Happy 4th Anniversary! I bet if you would take those 4 years of recipes and put them in a spiral bound binder and call them something like Carolyn’s Dream Low Carb recipes, you would make a killing, and have to do multiple printings! I too have had nothing but success with your recipes, and the sweet recipes are to die for! Even though I am lactose intolerant and can’t make so many any more, I still come to look. I’m trying to get my mom to go low carb b/c I know it would be so much better for her health, but it’s a slow go. I bet you any $$ that if I were to bake up a few sweet things for her to eat every week, she’d stop going to the grocery store and stocking up on her old sweet junk. I’m always recommending your website as one of my favorite to turn the tide on low carb indulgences. Congratulations again! P.S. Can’t wait to try the root beef float cupcakes!

    • Rica says

For Pete sake! Root beef float cupcakes – my mind is going, but my sense of humor is still intact, and I’m not backing down! I just found out that a prescription medicine that I was taking for my thyroid was giving me all these “dairy intolerant,” symptoms and more! So, I’m weaning myself off it for a while, and will try a few more unconventional methods for getting that critter (my thyroid) back under control, and maybe I won’t have that “dairy intolerance,” any more. One can only hope! On the plus side, both my husband and I adore your Coffee Walnut Dacquoise. Before I went low carb, I had taken some baking classes, and was introduced to a Dacquoise, at a local community college and we made this “standard” cake, but this is so much better! And I loved that it was low carb. I’ve even toyed with the idea of making “personal pan” Dacquoise so they could be transported better.

But, I would totally welcome a dairy free option on any sweet good, b/c know there are a lot of folks out there who have this affliction. Thank you again Carolyn, for all you do and are.

  61. Joey says

This is the first gf/sf site that I came across a couple years ago and where I initially learned about Swerve. I remember how excited I was to come across a sugar substitute that doesn’t give you cancer. The site has been a God send for my autistic daughter with gut issues that I have been trying to heal for so long and she is doing so much better after being gf/sf. Best of all, she can have cupcakes and deserts now instead of just watching the other kids eat theirs!!! Thanks for starting this blog Carolyn, we are so grateful!!!

  62. Elizabeth says

Love your blog!! I am excited to try out a bunch of your recipes, as my husband was just diagnosed with type 2 diabetes. I already eat low carb, but now we’re both eating low carb and he’s being extremely diligent about every item that he puts in his mouth. Swerve has been a godsend for us so of course we’d love to win!!!

I only came across your blog a couple of months ago but have already made a number of your recipes with great success. The latest was the Skillet Chocolate Chip Cookie:

    http://alldayidreamaboutfood.com/2014/02/skillet-chocolate-chip-cookies-low-carb-and-gluten-free.html

Even my eldest son, who usually turns up his nose at my low carb offerings, declared it really good. No he’s not a kid, but has been pretty skeptical of how good my food can be.

We’re having it again tonight, although my husband will go out and get some ice cream to go with it.

I have a long way to go before I run out of making your goodies, maybe I should have dessert 3 times a day! Just kidding :)

I just ordered the 22 lb bag of Swerve and can’t wait until it gets here so that I can make more yummy treats.

( Good writing you do as well.)
    Love,
    Susan

The eclair cake is screaming for me to make it! Oh, and as of yesterday, the only place I could find Swerve confectioners sugar (that wasn’t in 50 pound bags), was on Amazon for $15. WHAT?! I’ve still never tried it, but I’d love to!

It’s a good one! Some people have found that they need to bake the bottom a bit longer than I did. Just make sure it’s not fully cooked but not too wet either. Hope that helps!

Congratulations Carolyn, you have helped, my hubby and I, keep on the Wheat Belly diet which has dropped my blood pressure from 220/113 to 110/68 and my hubby’s blood sugars to 80’s and 90’s . We tried many of your sweet treats and Swerve has been THE sweetener. No aftertaste and wonderful Carolyn baked goodies. I would make the pumpkin spice cake for myself ( since I don’t like chocolate) and chocolate eclair cake for my hubby( who does).

  149. Linda says

Happy anniversary, Carolyn! I would love to try those root beer float cupcakes! I do miss root beer floats!

I have a story to share about Swerve. I was recently in a health foods store (one of two stores in our entire state that the Swerve website lists as selling their products) about an hour from my home, and I attempted to redeem a buy-one-get-one-free coupon for Swerve. The store manager was reluctant to accept the coupon because it expired the next day, and he wouldn’t be able to get it to his coupon redemption facility before the expiration date. I was very disappointed, and he proceeded to call the Swerve company and explain his dilemma. They told him to go ahead and take care of his customer (me!) and they would send him some free product to compensate for his inconvenience. Now, that’s a company I can fully support!

  150. Vicki Kron says

I will be trying out all the desserts that have Lemon in them, Cinnamon in them, Chocolate in them, Peanut Butter in them, Coconut in them…have I left anything out?

I’ve been trying to stay away from desserts, but not I’m ready to try them all (one at a time).

  151. Renee says

Happy Anniversary! I just recently found your blog and LOVE it! I haven’t tried Swerve yet and would enjoy the chance to try it out with any of your recipes.

  162. Shari says

Well, happy bloggiversary! I just discovered you about a month ago as I’ve started a ketogenic diet. Your recipes are great and inspiring. And Swerve has been so helpful with being able to do this without feeling like I have to sacrifice all sweets!

  165. Mary P says

Happy Anniversary! I just wanted to let you know that you have given me some great recipes for my granddaughter, age 7, who is diabetic. Most recipes are too old for her tastes or that she wouldn’t like. I can always find something here. Thank you so much and I will continue to watch your site.

  166. Jana Anderson says

I will make the Dark chocolate peanut butter layer cake. I am new to all this and trying to find dishes to satisfy my very skinny diabetic husband who is always hungry! Thanks for your recipes!

  167. Jan says

Happy birthday to your blog :) I’ve been wanting to try Swerve to make several things from your blog. I’ve tried straight erythritol, and just can’t get used to that cooling effect.

  168. patricia says

Congratulations ! I love your low carb, low sugar recipes. With a celiac, diabetic in the family they have been a blessing to me.

  169. Gail says

congratulations, Carolyn! I discovered you a few months ago and WOW! I’ve made several things from the blog, but I especially loved the chocolate tart with caramel and ganache. I think it was the Nantucket tart? Anyway, I took it to work and it only lasted a few minutes. There are a few diabetics here and they actually wanted seconds. One commented that it was great to be able to have a sweet that wouldn’t do him in! Certainly a testament to your inventive ways with sweets. Keep them coming!

  170. amanda says

Happy birthday and congrats! Love love love your recipes! I make something from here at least once a week or more!

  171. says

Happy happy birthday to All Day I Dream About Food – you’ve come a long way, baby! My bday is in a few days too and I think I may just have to make myself that scrumptious looking dark chocolate peanut butter layer cake.

  172. Leslie says

Happy birthday to your blog! Love your recipes. Even I have been successful in making some of your wonderful treats and that’s saying something since I’m totally inept in the kitchen! My fav is the brownie cheesecake but that chocolate eclair cake is calling my name so I’m trying that one next. I haven’t been able to get Swerve confectioners though so it’s had to wait.
Thank you again for all that you do. Not only do I enjoy your recipes but I love the way you present them. Kudos!

  173. Melanie says

Happy Birthday to your fantastic blog! I stumbled on it while looking up some low-carb recipes last fall. How glad I am that I did! I had to go back and read all the archived blog posts, and I do mean all! It felt like I had found a friend. You have a wonderful knack of being so real and down-to-earth with your words and the way you write. The pictures of your food are simply mouth-watering. Pardon me while I wipe up the slobbers. Your blog is the best low-carb blog, hands down! Love it!

  174. Melanie says

Oh, and I would definitely make something chocolate/peanut butter. There are so many options, I’d have to make several!

  175. Becki says

I would make all your goodies that include Swerve in the ingredients. It’s a little costly for my single mother budget! I would love to win this so I can finally try it.

  176. says

I plan on making anything that’s posted on the All day I dream about food website because it is all good! And thanks to Carolyn and swerve, my husband and I are finally able to stick with our low carb diet, my husband has lost enough weight that he is off his metformin with blood sugars and a1c within normal ranges, we are able to have birthday cake and holiday desserts with our children and family again. We are forever in your debt! :)

  177. Dyan K says

  180. Ann C says

I don’t know what I would do without you! Honestly, your sweet treat recipes grace our dinner table at LEAST once a week. THANK YOU , THANK YOU, THANK YOU!

ps: I would make the flourless type cake you came up with after your and your husbands getaway weekend!

  181. says

Wow! What a great giveaway! Happy Blogiversary! :D I JUST found your blog today – but I have to say, the peanut butter dark chocolate ganache cake you posted today is probably the first thing I’m going to try. Never HEARD of Swerve – but I’m a very-insulin-resistant diabetic, and I’m going to go read all about it. THANK YOU!!!!!!!!!!!!!!

    • Carolyn says

Well, as a fellow diabetes (really more of a pre-diabetic) I can say that Swerve never affects my glucose levels. But each person is different so make sure you test yourself to see how it affects you!

  182. Melanie says

Happy Blog Anniversary, Carolyn! This blog has been such a huge help to me and to my family. It’s been so great to be able to celebrate special occasions with my family with food we can all enjoy- and it’s been even better to be able to feel like I’m not missing out on the simple pleasures of life because of my dietary needs. I’ve said it before, but thank you for all you do! You’re definitely a star in my book! Oh. . .and my son requested the Dark Chocolate Peanut Butter Layer Cake for his birthday. It. Was. Amazing!!!

  186. Irene says

Congratulations!!! Thank you so much for all you do to help us keep on track with your great recipes!!

  187. Rebecca R. says

I haven’t used Erythritol, been somewhat a die-hard fan of Xylitol. I’d try making a couple favorite recipes, such as a low-carb chocolate cake and low-carb vanilla ice cream. As far as the kitchen tools… my measuring cups and spoons certainly could use updating.

  188. Julie Snow says

Happy anniversary! The three layer coconut cake looks delish, but honestly I haven’t tried much low carb baking because I hadn’t bought the Swerve. I would begin by perusing your site for all the yummy desserts we’ve been missing.

  215. Jammie says

I will make all of your wonderful mouth watering desserts!! I have been stalking the swerve website for over a month now for the confectioners. so this would be AWESOME :-)

  216. Maryjane says

First I want to wish you a Happy Birthday! And what I would do if I won, is bake, bake, bake. I love to bake and have just become gluten free and trying to use natural ingredients for a better health. I have been trying to find Swerve for my baking, but I live in New Jersey and there are not stores close to me that carry it.

  217. Evelyn says

Thank you Carolyn for all your wonderful recipes! I would love to win this and bake even more of your yummy cookies and desserts!

  218. Lee B says

In the past, I had given up on the low-carb way of eating because I craved sweets, especially scones and cinnamon rolls. I’m so excited to have learned about your blog, I’m feeling more positive about long term success on keto. So if I won the Swerve pack, I would definitely make the Cinnamon Roll Scones. Or the Almond Flour Cinnamon Rolls. Or maybe the Cinnamon Roll Coffee Cake:) Thanks for doing all you do!

  219. Jeanne says

I love your recipes – being new to gluten free and low carb you make it all so easy! Right now I am into making scones and cinnamon cereal with Swerve. Would love to win!

  221. Jaime Anderson says

Happy Anniversary to the best low carb baker ever (and I really mean that)! You have changed the way I eat and since I can now make sweet treats that are just as tasty if not moreso that sugary ones my husband is now eating low carb as well!

  222. Kathy says

I hope it’s legal to make my own birthday cake, because that’s what I’m going to do…and the Chocolate Birthday Cake with Sour Cream Frosting fits the bill! Thanks Carolyn and happy anniversary!

  223. Sherrie Lee Nelson says

Congratulations and Happy 4th Blog Birthday! Thank you for all your great recipes and educational blogs. Not realizing it was your blogiversary, I spent Fri, Sat, & Sun making low carb breakfast recipes for my Father-in-law who recently commented that there wasn’t much he could eat for breakfast and was tired of eating eggs every day (he had actually skipped breakfast that morning when my husband stopped by – not good for a diabetic!). He loved all of them and Monday morning was happy to have so many choices for breakfast. I had worked with your other, usually dessert recipes that I felt comfortable to just dig in and start cooking without caustiously making only one or two things for him to tryfirst. He has loved all of them!

  224. Jessica D says

This is such a great giveaway! My husband can’t have sugar due to blood sugar issues and winning this would be amazing. I would have to make his favorite, banana bread. I’ve never seen sugar free powered sugar though, so I’ll have to find a good recipe to use that in. I’ve missed cooking recipes using that.

    • Krystal Harte says

Hey Jessica – I found a way to ‘fake’ powdered sugar, and it works. We don’t have Swerve, so I’m using Truvia Baking Blend. To make powdered sugar, you put some corn starch with the sugar, and put it in a food processor. Chop it until it’s fine and resembles powdered sugar. The ratio is 1 tsp corn starch per 1 cup Baking Blend. You can find this on the Truvia website. Hope this helps – but having powdered Swerve would solve both our problems!

  225. Andrea B. says

Happy Anniversary! This is perfect because I came to your site craving cupcakes. Thank you for all that you do.

  226. Krystal Harte says

Happy Anniversary!! Wow, this is crazy how many followers and readers you have! I just stumbled across your blog when my husband searched for low-carb desserts. He sent me three of your recipes and told me to get started! We don’t have Swerve sweetener around here, so I’ve had to use another erythritol sugar substitute. I feel like I’m missing out! By the way, our favorite so far is the Sea Salt Almond Bark – it is amazing, and I’m not a fan of dark chocolate. Sure hope I’m the big winner! Thanks for the opportunity :)

    • Carolyn says

Thanks, Krystal! Plain erythritol is good, it just isn’t quite as sweet and some people find it has a distinct cooling effect in the mouth. I don’t find that at all with Swerve. Enjoy the recipes!

Happy anniversary! I am so thankful for the creativity and inspiration you bring to the low carb world. I was diagnosed with Type 1 Diabetes almost a year ago and found your blog shortly after my diagnosis. It has seriously been life changing for me! Thank you again!

Is it over-the-top to say I want to try ALL of the recipes?
You are my favorite low-carb food blogger! Thank you!

Happy blog anniversary! I have not had a chance to try any of these recipes because I don’t have any swerve sweetener but if I win I will definitely be making a cake for my husband’s birthday in June. Something chocolate. Thank you for the opportunity :-)

Happy Anniversary! This blog has become my go to place for low-carb inspiration. I always come here for help when I want to sweeten up this way of eating. Thank you for pointing me towards Swerve Sweetener, too! I love it. I have used it in several of your ice cream recipes, and I can’t wait to try the brownie cheesecake. Thanks for all you do, and here’s hoping many more happy years of blogging and inspiring others! ♥

Hi Carolyn, thank you so much for everything that you do. You are truly an amazing and talented person. If I were to win the giveaway I would love to make your classic chocolate birthday cake with coconut sour cream frosting for my type 1 diabetic niece she absolutely loves chocolate! HAPPY ANNIVERSARY to your blog!!

Congratulations on four years! It has been a true blessing to find your blog. You’ve made this low carb journey so much easier, and for that I’m grateful. If I win, I think will start with the brownie cheesecake (again) and follow it with your lemon squares (the ones that have the shortbread crust with cheesecake on top–already made these several times). My goodness, where to begin! :)

Hello my name is Lashaundra and I’m an addict. I LOVE carbs especially sweets however I changed my entire mindset about food 2 years ago when I lost my triplet daughters. I’m hoping to suppress my PCOS by eating whole foods and low carb and someday have a healthy pregnancy. I was soooo excited when I found your recipes for all the foods I have a love/hate relationship with. They are so simple and practical. Other sites were exhausting just looking at the list of impossible to find ingredients. I have already enjoyed several of your recipes but with swerve sweetener I would definitely make the Classic Chocolate Birthday Cake with Chocolate Sour Cream Frosting!

I am making your cupcake recipe RIGHT NOW for my little boys’s 10th birthday…. only making it as a layer cake and using Swerve confectioners for the frosting. We had to go off sugar when he was 3 years old… this is his FIRST cake with “real” birthday frosting. ps: a friend loaned me her layer cake molds. They are a special kind of glass spun silicone, so no greasing and just POPS out like magic. If you get a chance Caroline, check out those molds by a company called Demarle. LOVE your site. You are a godsend to helping keep my kids happy and compliant on this diet plan and healthy blood sugar levels.
