All Day I Dream About Food is a food blog devoted to low carb and gluten-free recipes.  It isn’t about dieting, but it is about creating healthy meals and delectable desserts that won’t send your blood glucose soaring.  My mission is to prove to the world that special diets need not be boring or restrictive, and that low carb, gluten-free dishes can be just as good as or better than their sugar and flour-filled counterparts.  It’s astonishing what you can do with a bag of almond flour, a stick of butter, and a willingness to experiment.

Since its inception in 2010, All Day I Dream About Food has grown to be one of the most popular low carb and gluten-free food blogs on the web.  I have a devoted following among people with diabetes and Celiac disease, dieters, and those simply trying to follow a healthier lifestyle. As someone willing to share her own personal story, I have connected deeply with my readers, who seek out my advice on subjects ranging from sourcing ingredients to fitness to holiday meal-planning.  As the science of human nutrition is slowly coming out in favor of a diet low in carbohydrates and higher in protein and fat, I expect my readership will only continue to grow.

As a longtime higher education administrator, I have a strong background in public speaking and presenting, including the American Association of Physical Anthropologists and the National Academic Advisor Association.  Most recently, I presented at the Eat, Write, Retreat Conference in Philadelphia (Mayl, 2013).
