Summer has arrived with a capital S. As it is wont to do in the Northeast, it sneaks up on you, hiding around corners and under bushes, waiting for just the right moment to surprise you. You wait for it all winter long, from the end of February on, thinking you will pay attention and notice Summer actually arriving and taking up residence. But it lags behind and drags its feet and you begin to despair, thinking it will never come and perhaps you might go straight into next winter with no real summer to speak of. Then BAM! Suddenly it’s Summer, hot and humid and slightly uncomfortable, but not at all unwelcome. And you think, when the heck did that happen? Seriously, happens to me every year. Where does the time go?
So to honour Summer and welcome it to the neighbourhood, I collected the best low carb burger recipes I could find. Now, you may notice that there are buns in many of these recipes and photos. Ignore the buns. IGNORE THE BUNS, I SAY! I wanted to find really interesting, delicious burger recipes that used fun and creative ingredients, so I looked high and low all over food bloggerdom for recipes where the actual burger and most of the toppings were low carb. I figure you’re all big kids, you know how to make do without a bun, or how to wrap your burger in lettuce. Consider these recipes as inspiration, and use your own fun ways to get the burgers to your mouths.
