ย I feel that I should wax poetic, make a big speech about my blog and everything it means to me. How it all started out on a whim, how I never expected anyone to be paying any attention and how amazed I am that I’ve built this baby into a full-time profession. All of which is very true. But more to the point, I am amazed by my readers; their loyalty and love is astonishing and keeps me going, even when times get tough. Every day, I get emails from people telling me that my recipes helped them stick to a healthier, low carb lifestyle. They thought they were destined for boring food and no sweet treats and having to rely on sheer willpower, and anyone who’s ever tried a diet knows how that goes! So I suppose you might say I have made it my life’s mission to turn that idea on its head. It started out with a selfish purpose, since I didn’t want to be stuck with boring food, no sweet treats and relying on sheer willpower to keep diabetes at bay. But it’s turned into so much more than that, a veritable community of people with the same goal: creating healthy and delicious food.

Besides a speech, I have the distinct feeling I should have made my blog a cake. Except my blog doesn’t have a mouth. I have a mouth, my husband has a mouth and my kids have mouths and we can do a cake some serious justice in this house. We ain’t afraid of no cake!           Everyone is having trouble getting it at the moment and they should have a big shipment in a few weeks! You can try other powdered erythritol but it’s not quite the same.

    Happy blog anniversary! I don’t have a website but I love using your recipes as inspiration for cooking/baking. As a Registered Dietitian, I love that you use erythritol in so many recipes – it is my favorite natural sweetener! It is the best alternative in terms of baking characteristics, nutritional profile, and (maybe most importantly) lack of GI upset as with other sugar alcohols due to its absorption mechanism. So, thank you for developing great recipes using this awesome ingredient!

    If I were to win the package, I’d definitely try to make low carb cinnamon rolls, maybe even pumpkin cinnamon rolls!

    Chocolate Chip Cookies!! I make a big batch, scoop the dough into little balls of yumminess and freeze them. When I’m cooking dinner at night (or reheating leftovers HA) it’s easy to set a couple out to thaw. By the time dinner’s over we have wonderful fresh hot chocolate chip cookies.     Four already-you age so well! It’s all that clean eating I do believe! I gave up baking for myself and my diabetic mother ages ago and started baking just for the dogs! Sure, the poochies are thrilled with their homemade treats but I missed having a little something too! Thanks to you Carolyn and your amazing website everything’s changed!     Happy 4th Anniversary! I bet if you would take those 4 years of recipes and put them in a spiral bound binder and call them something like Carolyn’s Dream Low Carb recipes, you would make a killing, and have to do multiple printings! I too have had nothing but success with your recipes, and the sweet recipes are to die for! Even though I am lactose intolerant and can’t make so many any more, I still come to look. I’m trying to get my mom to go low carb b/c I know it would be so much better for her health, but it’s a slow go. I bet you any $$ that if I were to bake up a few sweet things for her to eat every week, she’d stop going to the grocery store and stocking up on her old sweet junk. I’m always recommending your website as one of my favorite to turn the tide on low carb indulgences. Congratulations again! P.S. Can’t wait to try the root beef float cupcakes!

      For Pete sake! Root beef float cupcakes – my mind is going, but my sense of humor is still intact, and I’m not backing down! I just found out that a prescription medicine that I was taking for my thyroid was giving me all these “dairy intolerant,” symptoms and more! So, I’m weaning myself off it for a while, and will try a few more unconventional methods for getting that critter (my thyroid) back under control, and maybe I won’t have that “dairy intolerance,” any more. One can only hope! On the plus side, both my husband and I adore your Coffee Walnut Dacquoise. Before I went low carb, I had taken some baking classes, and was introduced to a Dacquoise, at a local community college and we made this “standard” cake, but this is so much better! And I loved that it was low carb. I’ve even toyed with the idea of making “personal pan” Dacquoise so they could be transported better.

      But, I would totally welcome a dairy free option on any sweet good, b/c know there are a lot of folks out there who have this affliction. Thank you again Carolyn, for all you do and are.

    This is the first gf/sf site that I came across a couple years ago and where I initially learned about Swerve. I remember how excited I was to come across a sugar substitute that doesn’t give you cancer. The site has been a God send for my autistic daughter with gut issues that I have been trying to heal for so long and she is doing so much better after being gf/sf. Best of all, she can have cupcakes and deserts now instead of just watching the other kids eat theirs!!! Thanks for starting this blog Carolyn, we are so grateful!!!

    All those pictures of cake have my mouth watering! It will be a year in April since I decided to try low-carb to lose weight, and then made the choice to try an adopt a more low-carb lifestyle for my family as well.     Congratulations! It’s fabulous that you’ve been able to make a full-time career out of providing wonderful recipes for those of us who have discovered a healthier way of eating!

    I only came across your blog a couple of months ago but have already made a number of your recipes with great success. The latest was the Skillet Chocolate Chip Cookie:

    Congratulations Carolyn, you have helped, my hubby and I, keep on the Wheat Belly diet which has dropped my blood pressure from 220/113 to 110/68 and my hubby’s blood sugars to 80’s and 90’s . We tried many of your sweet treats and Swerve has been THE sweetener. No aftertaste and wonderful Carolyn baked goodies. I would make the pumpkin spice cake for myself ( since I don’t like chocolate) and chocolate eclair cake for my hubby( who does).

    I have a story to share about Swerve. I was recently in a health foods store (one of two stores in our entire state that the Swerve website lists as selling their products) about an hour from my home, and I attempted to redeem a buy-one-get-one-free coupon for Swerve. The store manager was reluctant to accept the coupon because it expired the next day, and he wouldn’t be able to get it to his coupon redemption facility before the expiration date. I was very disappointed, and he proceeded to call the Swerve company and explain his dilemma. They told him to go ahead and take care of his customer (me!) and they would send him some free product to compensate for his inconvenience. Now, that’s a company I can fully support!

    congratulations, Carolyn! I discovered you a few months ago and WOW! I’ve made several things from the blog, but I especially loved the chocolate tart with caramel and ganache. I think it was the Nantucket tart? Anyway, I took it to work and it only lasted a few minutes. There are a few diabetics here and they actually wanted seconds. One commented that it was great to be able to have a sweet that wouldn’t do him in! Certainly a testament to your inventive ways with sweets. Keep them coming!

    I plan on making anything that’s posted on the All day I dream about food website because it is all good! And thanks to Carolyn and swerve, my husband and I are finally able to stick with our low carb diet, my husband has lost enough weight that he is off his metformin with blood sugars and a1c within normal ranges, we are able to have birthday cake and holiday desserts with our children and family again.       Well, as a fellow diabetes (really more of a pre-diabetic) I can say that Swerve never affects my glucose levels. But each person is different so make sure you test yourself to see how it affects you!

    I haven’t used Erythritol, been somewhat a die-hard fan of Xylitol. I’d try making a couple favorite recipes, such as a low-carb chocolate cake and low-carb vanilla ice cream. As far as the kitchen tools… my measuring cups and spoons certainly could use updating.

    First I want to wish you a Happy Birthday! And what I would do if I won, is bake, bake, bake. I love to bake and have just become gluten free and trying to use natural ingredients for a better health.     In the past, I had given up on the low-carb way of eating because I craved sweets, especially scones and cinnamon rolls.     Congratulations and Happy 4th Blog Birthday! Thank you for all your great recipes and educational blogs. Not realizing it was your blogiversary, I spent Fri, Sat, & Sun making low carb breakfast recipes for my Father-in-law who recently commented that there wasn’t much he could eat for breakfast and was tired of eating eggs every day (he had actually skipped breakfast that morning when my husband stopped by – not good for a diabetic!). He loved all of them and Monday morning was happy to have so many choices for breakfast. I had worked with your other, usually dessert recipes that I felt comfortable to just dig in and start cooking without caustiously making only one or two things for him to tryfirst. He has loved all of them!

    This is such a great giveaway! My husband can’t have sugar due to blood sugar issues and winning this would be amazing. I would have to make his favorite, banana bread. I’ve never seen sugar free powered sugar though, so I’ll have to find a good recipe to use that in. I’ve missed cooking recipes using that.

      Hey Jessica – I found a way to ‘fake’ powdered sugar, and it works. We don’t have Swerve, so I’m using Truvia Baking Blend. To make powdered sugar, you put some corn starch with the sugar, and put it in a food processor. Chop it until it’s fine and resembles powdered sugar. The ratio is 1 tsp corn starch per 1 cup Baking Blend. You can find this on the Truvia website. Hope this helps – but having powdered Swerve would solve both our problems!

    Happy Anniversary!! Wow, this is crazy how many followers and readers you have! I just stumbled across your blog when my husband searched for low-carb desserts. He sent me three of your recipes and told me to get started! We don’t have Swerve sweetener around here, so I’ve had to use another erythritol sugar substitute. I feel like I’m missing out! By the way, our favorite so far is the Sea Salt Almond Bark – it is amazing, and I’m not a fan of dark chocolate. Sure hope I’m the big winner! Thanks for the opportunity ๐Ÿ™‚

      Thanks, Krystal! Plain erythritol is good, it just isn’t quite as sweet and some people find it has a distinct cooling effect in the mouth. I don’t find that at all with Swerve. Enjoy the recipes!

    Hello my name is Lashaundra and I’m an addict. I LOVE carbs especially sweets however I changed my entire mindset about food 2 years ago when I lost my triplet daughters. I’m hoping to suppress my PCOS by eating whole foods and low carb and someday have a healthy pregnancy. I was soooo excited when I found your recipes for all the foods I have a love/hate relationship with. They are so simple and practical. Other sites were exhausting just looking at the list of impossible to find ingredients. I have already enjoyed several of your recipes but with swerve sweetener I would definitely make the Classic Chocolate Birthday Cake with Chocolate Sour Cream Frosting!

    I am making your cupcake recipe RIGHT NOW for my little boys’s 10th birthday…. only making it as a layer cake and using Swerve confectioners for the frosting. We had to go off sugar when he was 3 years old… this is his FIRST cake with “real” birthday frosting. ps: a friend loaned me her layer cake molds. They are a special kind of glass spun silicone, so no greasing and just POPS out like magic. If you get a chance Caroline, check out those molds by a company called Demarle. LOVE your site. You are a godsend to helping keep my kids happy and compliant on this diet plan and healthy blood sugar levels.
