Mexican Cauliflower Rice

This Mexican Cauliflower Rice is a one pan wonder! It’s an easy keto skillet meal that takes 8 ingredients and only 25 minutes to make. And the whole family loves it.

• Ground beef • Onion diced • Red pepper • Taco seasoning • Tomatoes • Cauliflower rice  • Chicken broth • Shredded cheese

In a large skillet over medium heat, brown the ground beef until almost cooked through, but still a little pink.

STEP 1:

Add the onion and pepper and cook until the vegetables are tender. Then stir in the taco seasoning.

STEP 2:

Add tomatoes and cauliflower rice and stir to combine. Add broth simmer until the cauliflower rice softens.

STEP 3:

Top with cheese and cover. Cook until cheese is melted. Top with sour cream, avocado, and cilantro.
