Keto Strawberry Shortcake

This Keto Strawberry Shortcake has everything you love about the classic dessert, but with only 4.9g net carbs.

• Strawberries • Allulose sweetener • Lemon • Almond flour • Whey protein powder • Coconut flour • Swerve Granular • Baking powder • Salt • Butter • Eggs • Vanilla • Heavy cream • Powdered sweetener

Combine chopped strawberries, allulose, and lemon juice. Let sit to allow the juices to release.

In another bowl, combine  almond flour, whey protein, Swerve granular, baking powder, lemon zest, and salt.

Grate butter into the bowl  and combine. Stir in the eggs and vanilla until the dough comes together.

Drop the dough in spoonfuls mounds onto a silicone lined baking sheet. Gently shape by into high, rounded mounds and bake at 325ºF until golden brown.

Remove and let cool completely on the pan

Whip the heavy cream with the powdered sweetener and vanilla until it holds stiff peaks.

Cut each biscuit in half. Top bottom half with whipped cream and berries. Add top half with another small dollop of whipped cream.
