Take your favourite fast food meal and make it low carb and healthy simply by wrapping it in lettuce. I used my favorite cheeseburger and turned it into a quick, easy low carb dinner recipe.
Lettuce wraps are quickly becoming a staple in my house, and with good reason. They are healthy, easy to make and you can fill them with practically anything. They are always well received by the kids, as they delight in anything that they can eat with their hands. And we are finally getting to the point in their young lives where they know how to eat things like this relatively neatly. So I don’t go crazy watching all the filling spill out from the lettuce and onto the table and floor. That’s been a long time coming!
I can actually remember the first time I tried lettuce wraps. I was going out to lunch at PF Chang’s with some work friends, and they were raving about the lettuce wraps. I couldn’t quite understand all the fuss; it seemed rather odd to me to serve something wrapped in lettuce. And then I tried one and I was hooked pretty darn quick. All those great Asian stir-fry flavours in a crisp cup of iceberg lettuce was nothing short of revolutionary. The lettuce allowed you to get the goodies to your mouth without adding any special flavour of its own and without filling you up with extra carbs. So you could eat more of the filling and that’s always a good thing.
But I don’t think it occurred to me to make lettuce wraps at home until I went low carb. And since then, I’ve loved coming up with fun variations like Spicy Chicken Club Lettuce Wraps and Thai Basil Chicken Lettuce Wraps. And this particular recipe, which arose from a craving for a big juicy cheeseburger with my favourite toppings. I didn’t feel like actually forming the burgers and grilling them, so a quick pan fry of some ground beef and the meal was done. Delicious!
