It’s summer and the temps are on the rise. We had our very first scorcher this week. Well, okay, scorcher in New England terms; it almost broke 90 degrees! And as this Canadian tends to wilt with anything above 80F, I was definitely feeling it. I was feeling it in a loving, yay-it’s-finally-summer sort of way, though. I am loathe to complain about the warmer temps when our winter was so harsh and our spring was so late this year. So bring them on, I say! And with the warmer temps comes the need for cooler treats, for those days when turning on the oven feels like stepping into the threshold of hell.

    I’ve been making tons of popsicles lately, such a perfect dessert for the summer! We especially like the Raspberry Coconut Cream popsicles, the perfect way to use up berries that are a bit past their prime. The second time I made them, I used strawberries instead of raspberries. Next, I used half raspberry, half strawberry, which is now our favorite. It’s the perfect blend of tart and sweet.

    These coffee popsicles are wonderful (they have a surprise ingredient), I use powdered erythritol instead of maple syrup:

    These blueberry mint popsicles are delicious! They remind my husband of the frozen fruit bars from the grocery store, only much better. Again, I use powdered erythritol instead of honey. Since I was short about half of the coconut water (left over from the Raspberry Coconut Cream Popsicles), I added almond milk for the other half. I also used chocolate mint I have growing in the yard.

    Another combo I’m going to make is Mango Lemon Balm Coconut Cream. I have a couple of mangoes I need to use up, and tons of lemon balm in the yard. I just need to free up some popsicle molds first.

    I’m planning to make the Chocolate Covered Strawberry Cheesecake for our belated Father’s Day BBQ on Sunday. My sister-in-law, who also lives a low carb lifestyle, doesn’t bake, so usually goes without dessert since she can’t eat the cake our family usually has (we also celebrate several birthdays). This way, she and I get dessert – yeah!

    Just last week I was thinking about checking Pinterest for no-bake desserts. Since hubby and I are both diabetic, low carb was essential. You’ve done all my work for me! All I have to do is the fun part-make it and eat it. Thanks so much
