This really is the best ever low carb chocolate chip zucchini bread. And you know I don’t say that lightly! Dairy-free, sugar-free, grain-free.

Yup, I am doing it. I am sticking my neck out there and telling you that this is the best ever low carb chocolate chip zucchini bread. Because I truly believe it is and I don’t say that lightly. I stand by my claim. It’s tender, it’s moist (ugh, that word!), it’s sweet without being too sweet. It’s chock full of shredded zucchini and chocolate chips. And it got a big thumbs up from my CrossFit coach, who heretofore detested zucchini bread. Apparently because his father’s wife used to make it all the time and he detested her too. But I will take it as a compliment that he nearly devoured the whole loaf I brought by the time our class was over.

This low carb chocolate chip zucchini bread is the best! Tender and delicious, studded with chocolate chips. Sugar-free and grain-free.

I am happily drowning in zucchini from my garden this year and have been creating zucchini recipes like a madwoman. The funny part is that I have recently decided that I don’t like raw zucchini. There’s something about both the taste and texture that I find off-putting. But roasting or grilling changes the flavour to something I thoroughly enjoy. And there is no question that zucchini noodles are one of the most useful low carb inventions of our time. Lightly cooked with a little butter and parmesan? Or with a beefy bolognese? Bring it!

And grated up and added to baked goods, zucchini adds something special. I can’t quite put my finger on it, but I love it. I’ve made this zucchini bread 4 or 5 times already. The first time I made it, I did a triple batch…one for my family, one for my running team, and one for my next door neighbours who are dairy-free. Since I just threw it together, I didn’t have high expectations. But it smelled so good when it came out of the oven, I had to sneak a piece. I slathered it with butter and both the butter and I melted, it was so good. And then I quickly wrote down the recipe so I didn’t forget what I’d done. Then, you know, I had to make it again to make sure I had nailed the recipe. Then, you know, I had to make another double batch so I could take some to CrossFit and have some at home.

Yup, this recipe is a keeper. I do declare it to be the finest low carb zucchini bread you will ever taste.

    Here we go again. I cannot get your recipes on ASweeLife. I get all the ads but where the recipe is…it is blank.
    I never got your bacon and kale frittata recipe either. I did email your site requesting it but never heard back.

    What is the purpose of using the egg white powder or whey powder? Would there be a substitution? I don’t need to be dairy-free… Thanks!

      Gluten is a protein and in its absence you need a dry protein to help the baked good rise and hold its shape.

    For the people who are having a problem with blank pages, on some sites I have a problem and when I clear the cache (browsing data) in the hard drive it usually works to get it right again. I don’t have a problem with this site, but there is one particular one that doesn’t work with Chrome, but it does work with Firefox.

    Carolyn I not only found the recipe easily I made this yesterday and it’s true as you say: it is the best. I’ve been on a sweet roll so I did feel it needed more sweetness so I lathered the top of my slice today with your warm chia seed raspberry jam. AHmazig. Prior to you posting this recipe, last week I made your chocolate zucchini bundt cake and loaded it with a mocha cream cheese frosting. Thank you! Your seasonal recipes and archives are a treasure for us.

    I’m a computer novice, when I use the firefox browser the recipe shows up, when I use internet explorer it doesn’t.

    I’ve never used zucchini in a baked goods recipe. Are the 2 cups of zucchini a packed 2 cups?

    DaubeBakery in Rochester MN uses the day old unsold sweetbread to make these crispy little treats that are really good with coffee. They slice the sweet bread really thin (1/4 to 1/8 of inch maybe), brush with melted butter, sprinkle with sugar, and bake until crisp. They have a cranberry pistachio one that I love…any chance you can add this idea to your list of things to try??? ? i forget what they are called but its pretty hard to stop eating them.

    Major yum! Made this yesterday and my non- low carb friends asked for the recipe! Will make frequently with all the zucchini I have. I did divide into 3 small loaves and baked for 30 minutes.

    Delish! The coconut texture was a bit off-putting, but the flavor was spot on. Maybe my shredded coconut brand is a bit course? What brand so you use? Thanks for helping me sneak in more veggies!

      I use Bob’s and it’s the coconut that helps give it the oatmeal-like texture but if you don’t like it, you can try just replacing it with almond flour.

    Wow, this is in fact the best zucchini bread–not just the best low carb–ever! I even screwed up the recipe because after I started making it I realized that I didn’t have enough almond flour (only 1 1/4 c), so I added 1/4 c coconut flour, and it sill turned out perfectly. It was so moist and delicious and perfectly sweet. I did add an extra 1-2 Tbsp of Swerve, because my zucchini wasn’t super sweet. Myself, my non-LC family members, and my GF friends couldn’t stop eating it. I’m almost afraid to make it again because I will just devour it. Oh, did I mention that I’m pregnant, and that this was the absolute best was to satisfy my sweet craving in reasonably healthy way. Thanks for the awesome recipe!

    A couple of your recipes call for almond milk, could I sub hemp milk for this?
    Also, I am in the UK, and can’t get Swerve, except on Amazon at an extortionate price, what other sweetener would do?

      Unsweetened hemp milk is fine. There are some good European sweeteners like Sukrin and Natvia that are more accessible to you, I believe.
