My love for Nutella is almost (almost!) as strong as my love for peanut butter. But do you want to hear the funny part? Before I went low carb and started making my own sugar-free chocolate hazelnut spread, I was really rather indifferent to it. I liked it well enough but I didn’t go out of my way to buy much of it or keep my home stocked with jars of the stuff. In my first pregnancy, I went through a phase of craving Nutella on graham crackers…but I often ended up feeling so full and uncomfortable, I got over that craving pretty quickly.
But I’ve always loved the chocolate hazelnut combo and a sugar-free version of the famous spread was one of the first things I ever made when I embarked on a low carb diet. To my delight, I found I liked it even better than the “real thing” and I started making it on a regular basis. I slowly perfected my recipe and I started incorporating it into other recipes as well. It’s useful stuff! Right now, my whole family prefers it to peanut butter and I can hardly keep up with the demand!
And it’s so easy to make that you really won’t regret making a big ol’ batch. I recommend having some on hand at all times, so you can quickly whip up some of the goodies below. It’s great on low carb bread or crackers and delicious drizzled over ice cream. But if you want to bake it into some other treats, I have plenty of ideas for you.

Carolyn, a good way to remove skins is too put the hot hazelnuts on a damp kitchen towel and rub them in the towel. No scorched finger tips and works well…love your recipes, keep up the great work.

That has NEVER worked for me so I find it easier to just rub them between my fingers. I’ve tried the towel method so many times and just get frustrated!

I love Nutella! I love it so much that I have multiple jars of it in our house and I have no self control when eating it. I love it on bananas or right out of the jar. Although I feel terrible once I am done having a little binge session so I can not wait to try your recipe. Question for you, how much coco and sweetener do you use? Also what kind of sweetener do you prefer and is it needed?
