So how’s winter going in your part of the world? Ours has been…interesting. Like many regions, Portland has been walloped with a couple of good sized winter storms. Unlike many regions, however, Portland has no clue how to handle it and the city shuts down completely. What might be considered a measly (and normal) 12 inches of snow in other parts of the country becomes an epic blizzard that incapacitates the whole region. My kids were out of school for a full week because the roads were too dangerous. The snow got packed down into a thick layer of ice because there is no snow removal equipment. The city government has a motto of “Portland: The city that works”. And I find myself fighting the urge to grab a sharpie and write “unless it snows, and then no one can get to work for days” underneath it.
So that’s my lead-in for these delicious low carb winter recipes. Being snowbound for days really revs up my kitchen mojo. Granted, these weren’t all created in our week at home. These are the recipe I have written for Swerve Sweetener and A Sweet Life Diabetes Magazine that you may have missed over the past few weeks and months because I haven’t featured them here. From soup to cereal to deliciously creamy peppermint hot chocolate, I thought you might need these. Especially if your winter has been even remotely like mine!

Yes, the recipe was there but, unless I’m blind which is likely, don’t see how many muffins (servings) this is supposed t make. Oh well, will just fill them to the top until I run out of batter. Didn’t see any nutritional info either but will assume it is similar to your other muffin recipes. Thanks.

Huh…I wonder why they removed that! I think it makes 12. I am not sure of the nutritional but it’s likely similar to my double chocolate blender muffins or other chocolate muffins of mine.

I did make the mocha chip muffins and they were very good, sort of a cross between a muffin and a brownie. They
made 12 good size muffins. I find that using my food processor to make your various muffin recipes works very well. I think it helps to smooth out the batter resulting in a finer crumb once baked.

I was thinking about making the Mocha Chocolate Chip Muffins into a Bundt Cake. Would you think fully doubling it would make a good cake, and also fit in the large Bundt 12 cup pan ?

“Snickerdoodle” is a hook for me every time, and this time was no different. When we started living the low carb lifestyle a year and a half ago, pancakes were one of a list of things I thought I was giving up. Turns out not true at all; I have a handful of pancake recipes now that are so much more satisfying than the original ever pretended to be. Recently I convinced myself that IHOP was an itch that really needed to be scratched again, and I was shocked to discover that I no longer even liked them much, forget enjoying them, and I sure as the devil don’t miss the gastronomical challenges that attended them.
But I digress, I made these this morning exactly in accordance with your recipe as I am wont to do with every new recipe I try, and I’m glad I did; I honestly can’t think of a thing I would try that would make them better. I chose to top them with sugar free maple syrup and a few chopped roasted pecans, but that’s just me. I can only say, as my daddy would have said, these things were seriously “fittin”! 🙂

One other thing, I’m not at all sure where they got their carb count for these; my calculator puts them at 1.9 net carbs and 2.3 fiber ea. with a 12 cake yield and using Bob’s flours.

They have to count the “carbs” in Swerve, even though they don’t affect blood sugar.

Each recipe has the carb count on it where it lives on A Sweet Life or Swerve.

The nutritional info on the Mocha Chocolate Chip Muffins is incorrect. The calorie count is not correct-1 cup of almond flour is 640 calories so 2 3/4 cups would be 1760 calories or 146.7 calories per each muffin for the almond flour alone. Per my Fitness Pal I get 268 calories and 5 net carbs per muffin.

When the recipe is on the Swerve website, they calculate their own nutritional info independently. I do not do it for them. So reach out to them and ask about this.
