I am a serious carnivore. I love eating meat and I love cooking meat. I love the smell of it and I love trying new ways of cooking and serving it. I love it in all forms…roasted, grilled, pan-fried, smoked. I even have enjoyed it raw as carpaccio. I love pork, I love beef, I love lamb, I love chicken, I love duck, I love turkey. I just really really enjoy meat. I did spend the first 7 years of my life on a beef cattle farm, after all. So when someone comes along and says hey, you want to try a box of our delicious grassfed meat, how do you think I respond?
You may have heard of Butcher Box by now, as they’ve been around for a little over a year. It’s yet another subscription style delivery box, but of course it’s full of meat. Good, grassfed beef and humanely-raised pork and chicken. This is definitely right up my alley and I know it’s probably right up many of my readers’ alleys too.
I live in Portland, so I actually am fortunate to have pretty easy access to local pasture-raised meats. I have 3 or 4 farmer’s markets in my vicinity and a few local butcher shops that focus only on grassfed and pasture-raised. I also happen to have a few good friends whose families run farms and who hooked me up with a quarter cow last spring and a half a hog this fall. In fact, one family decided to raise some hogs purely based on my interest in buying pork! But I realize that not everyone has this kind of access to the healthy and sustainably raised meats that I do.
That’s why Butcher Box is quite revolutionary, making these quality meats accessible to everyone. Now, I know you are going to ask about cost and that’s an important factor. A single box is $129 and gives you about 10 lbs of meat. While that is not inexpensive, it’s also quite reasonable for the quality of what you receive. It’s less expensive than purchasing grassfed at Whole Foods, that’s for certain, and even some of the vendors at my farmer’s markets have similar prices.

My experience with Butcher Box was mostly a positive one. My box was actually delayed because of bad weather somewhere in the Midwest, and it arrived 4 days later than it should have, through no fault of Butcher Box themselves. I was worried that the meat would have spoiled but it was fine. It was packed with dry ice and the ice had all evaporated but the meat was still frozen solid. I chose the beef and pork box and got a lovely selection of steaks, pork chops, bacon, ground beef, stew meat and a funny package of something called Thin Slice (beef). Turns out it was really thin sliced, almost shredded, beef which was perfect for stir-frying.
I think I would have liked to see a bigger rind of fat left on the steaks and the pork chops. That might be my only “complaint”, if you can even call it that. And it would be wonderful if they could add grassfed lamb to their line-up as well. That would suit this fat-adapted carnivore very nicely. But beyond that, I’d say Butcher Box is a service definitely worth investigating!

My quick and easy go to way to cook beef right now is just to place two tablespoons of grass-fed butter in a pan on the stove and make a nice juicy grass-fed beef burger! I like to cook beef very simply, grilling is great with a bit of a spice rub and a pat of butter on top when its done. For eye rounds a simple rub of herbs and garlic and the 500 degree method is great.

My favorite way to cook beef is to cook a big t-bone on the grill rubbed with garlic and salt then once it’s resting, squeeze some lemon and sprinkle cracked pepper on it! I like my beef rare (or mooing, as my husband says), so for me, I put a steak in a hot frying pain and just get the outside cooked quickly without cooking the inside too much. And I’m not a big fan of seasonings on my beef because I just love the taste of the meat. I do occasionally add salt. I never heard of carpaccio before so I had to go look that up. Definitely something I will have to try sometime. I was raised in Baltimore, MD, and my uncle was a butcher so we always had the best quality ground beef in our house. I love Steaks on the grill and I am lucky to have a husband who can grill it without charring it. Grassfed meats would be awesome.
