My favorite kind of cookie is a tie between Nighty-Nights (a light merangue with chushed pecan and lily’s dark chocolate chips, bake in the evrning, whrn timer goes off turn off oven and leave in overnigh, and melting moments with port wine icing. I am so excited I want to do a happy dance! I started eating keto a few months ago. And now the holiday season is upon us and I was wondering if I would have to give up my annual traditional of making spritz cookies in every flavor under the sun: orange, lemon, spice, etc. I thought this would be the first year in 20+ that my cookie press would go unused. I AM IN HEAVEN at just the THOUGHT of being able to use it for a keto cookie instead of possibly having to make them all to give away and not being able to eat a single one!!! I love your cookbook- it was just given to me as an early Christmas present. So glad to have it in hand. I was traveling whenever this was posted, but I just wanted to let you know again how much I appreciate your blog (and your book). I tell people about it all the time. Based on lots of responses, I’m guessing there was a question about favorite low carb cookie- I tried several from the holiday cookies collection I got last year- the chocolate peppermint sandwich cookies and the gingerbread cheesecake cookie bites were big favorites.
