I’ve had one helluva week. That’s about all I can muster to say here. A young child home all week with the flu and some people who didn’t follow through on work they were supposed to do for me have left me feeling slightly defeated. Exhausted after getting up with my sweet sick little one, stressing about the things that need to be done and aren’t done, I am just throwing in the towel. Except I am not because that’s not how I do things. It’s my nature to battle it out, even when there is little left in the tank. So here I am, battling it out, determined to not let it beat me. I will persevere…but in the meantime, I need a big ol’ nap.

No Bake Low Carb Brownie Bites

You know what helps me through times like these? Dessert. No, I am not kidding. Having a sweet but healthy treat to savour at the end of a tough day is really motivating for me. It may not solve my problems, it may not make my kid’s fever come down, it may not make my to-do list any shorter…but it makes it all a little more enjoyable. Even in times of stress, we should have a few bright moments to make it all tolerable.

Easy low carb brownie truffles

I whipped up these little no bake brownie bites for a New Year’s Eve party with friends. But they would be absolutely perfect for your sugar-free keto Valentine’s Day too.

    Made these today and they are really delicious. I pressed into a mini muffin pan with liners (made 24) and stuck a whole walnut or pecan on top. Super quick and easy and they have a strong chocolate taste so I’m not missing the coating. I also reduced sugar to 1/3 cup as I usually like things less sweet. I think I’ll be using this recipe a lot!

      If kept in the fridge, they can last for a week at least.

    One question- how much Swerve do you use?

      Since Swerve measures just like sugar, you use 1/2 cup. Use the powdered kind.

    These were fabulous! I made a few tweaks though.
    – First, the dough was too sticky to roll nice balls with at first, so I used a 1T scooper to put the messy balls on parchment paper and put in the freezer. I took them out after 12ish minutes and they had slightly hardened, so I was easily able to roll them into perfect balls.
    – I really don’t like dry or crumbly cake, so I added 2oz of cream cheese to the recipe.
    – I added cake batter flavor extract to the batter- so good!
