Mini Taco Bites

Bite-sized keto tacos! These fun low carb mini muffins make a great healthy, appetizer, snack, or even dinner. Dip them in your favourite low carb salsa. In partnership with Safeway.

Keto Taco Bites - mini taco egg muffins

Perhaps one of the most oft-repeated phrases in a parent’s lexicon is “What’s the magic word?”. And if you’ve said it, chances are you were simply reminding your children of their manners. But I have another magic word for you, one that is far more powerful than “please”. It’s a word that basically ensures that my kids will eat whatever I put in front of them, without complaint. In fact, they will gobble it up and ask for more, so you know it’s a word I use with relative frequency.

How to make Low Carb Taco Bites


That word is “Taco”. I don’t know what voodoo or hoodoo saying that word unleashes upon the world, but it magically makes the age-old dinnertime battle just disappear. And it doesn’t have to be in reference to real tacos, because those don’t count as healthy in my book. Just about anything taco-flavored will suffice. It even has my kids willingly devouring large salads. Taco seasoning is like fairy-dust…sprinkle a little into your meal and the whole world is a happier place.

So when I wanted to make a fun bite-sized healthy snack for a kid-friendly New Year’s Eve party, I instantly thought of this magic word. I hit my local Safeway for healthy O Organics® “taco” supplies…grass fed ground beef, salted butter, shredded Mexican blend cheese, and of course salsa for dipping these little low carb Taco Bites. The O Organics sour cream is rich, delicious, and makes for a fun presentation.

These were so popular among both the kids and the adults at the party, I’ve already got two requests for the recipe. And they’re so easy to make, I know I will be making them frequently. Mini Magic Taco Muffins!

It’s an extensive line, with everything from produce to dairy to canned goods, and it’s great value for the money. Course: Appetizer
Cuisine: Mexican
Servings: 32 mini muffins
Calories: 329 kcal
Ingredients
  • 1 lb O Organics grass-fed ground beef
  • 3 tbsp taco seasoning
  • 2 tbsp O Organics salted butter melted
  • 6 large eggs
  • 6 ounces O Organics Mexican Blend shredded cheese
  • 1 cup O Organics salsa
  • Other garnish such as O Organics sour cream, sliced olives or guacamole
Instructions
  1. In a large skillet over medium heat, sauté the beef until almost cooked through, breaking up the clumps with a wooden spoon. Add the taco seasoning and continue to sauté until completely cooked through. Remove from heat and let cool.
  2. Preheat the oven to 350F and brush a good non-stick mini muffin pan with the melted butter. (You can also use silicone or parchment mini muffin liners, if you prefer - if your pan is not very non-stick, this is your best option). This recipe makes about 32 mini muffins so you may need to work in batches if you don’t have more than one mini muffin pan.
  3. In a large bowl, whisk the eggs. Add the taco meat and 4 ounces of the shredded cheese. Whisk thoroughly to combine.
  4. Fill the muffin cups to about ¾ full and sprinkle with the remaining shredded cheese. Bake 15 to 20 minutes, until puffed and firm to the touch. Remove and let cool 10 minutes. Use a thin flexible spatula to run around the edge of the muffins to release.
  5. Serve with your favourite taco toppings, such as salsa, sour cream, and guacamole.

    I made this tonight and it is delicious! My concerns are that the crust was REALLY thick, disproportionate to the meat and certainly did not look as pretty yours pictured! Could I increase the ground meat to 2 lbs, increase the taco seasoning appropriately and increase the almond milk to one cup? Perhaps this would balance it out a bit!
    I just got your cookbook-it’s sensational and I thank you for leading me through the HFLC journey with such delicious foods! I’ve never enjoyed cooking as much as I do now!

      Mine were done in the proportions listed and I made them several times. It’s not a crust, they are supposed to be egg muffins. But do what works for you.

    Hi – I was wondering if these could be frozen and reheated. If so, what temp would you recommend reheating at, and would you thaw first – or go from freezer to oven?

      Well my Taco Pie is great in the freezer so yes, since this is similar. I would thaw completely and then reheat at 300F until nice and hot to the touch.
