Keto Turkey Salad Recipe - leftover turkey salad in a red bowl with pecans and cranberries

Thanksgiving is 4 days away. And you know that that means? Ridiculous amounts of turkey leftovers cluttering up your fridge! I don’t think I’ve ever had a holiday where I am not left with huge amounts of turkey. No matter how small a turkey we get or how many people we have to dinner, there are just so many leftovers we find ourselves eating turkey for a week.

And getting really sick of it by the end. So it’s time to come up with some creative ways to use all that leftover turkey.

This easy turkey salad recipe just shot to the top of my list. It’s fresh and flavourful, and my whole family loved it. And it’s perfect wrapped up in the incredibly useful KBosh pizza crusts.

Hungry for more turkey? Try these slow roasted turkey legs!

Keto Turkey Salad Wraps made with low carb vegetable crusts

I know I’ve told you about these crusts before and I really think they are a spectacularly useful keto convenience food option. They have saved me on many an evening when I am stumped on what to feed my family. I just grab a few crusts from the freezer and whip up a quick keto pizza dinner.

But I’ve also found them incredibly useful for other recipes, like keto quesadillas. I plan to try them in a few other ways, including enchiladas and lasagna. Thus far, they’ve stood up to everything I’ve tried them in, which can’t be said for a lot of keto wraps and crusts.

Do yourself a favour and load up on the KBosh crusts. They are perfect for some easy meals during the holiday season. And they are carrying a limited time Pumpkin Zucchini Dessert Crust. Dessert crust? You bet. They are delicious with a little sweetened cream cheese as a holiday dessert idea.

And wrapped up in KBosh crusts, it makes a great keto sandwich.

Made this for dinner tonight. Wow! Delicious. My husband requested it as an annual Thanksgiving leftover dish. Everything goes so nicely together. I altered the recipe a little. Our turkey was smoked, which added a nice layer of flavor. I didn’t have sage, so I used a little dried thyme. I also added a bit more mayonnaise. So good with a stack of low-carb crackers! Thank you, Carolyn!

Indeed, and it was especially good in the second batch of leftover turkey salad that I made for lunch today! 😁 We’re really enjoying this recipe. So simple and so good.

For the wraps—do you bake the crusts as directed? Then cool?

No, don’t bake them at all. They are fully cooked already, that’s just if you’re making pizza. You can warm them gently to make them more flexible before you wrap them up…

Back for more leftover turkey salad this year! 😁 No smoked turkey this time, but the salad is just as good as last year. Such great flavor, and it’s an excellent way to salvage slightly dry turkey. Thank you once again, Carolyn!
