The best low carb cheddar recipes and a giveaway for great cheese and a 1 year subscription to ChopChop Magazine.

Best low carb recipes using cheddar cheese!

Do you like cheese? Sorry, stupid question. Of course you do.

Do you like real, whole food fresh from the farm? Sorry, stupid question. Of course you do.

Do you like cooking with your kids? Mmmm, that’s a tougher one to answer. Sometimes, when time and patience allows and you aren’t stressed out and worried about the mess your kids are going to make. Still, in a perfect world, that would also be a stupid question. Because cooking is fun and kids are fun and we should be having more fun in the kitchen with our kids.

So have I got a great giveaway for you.

My friends at Cabot Creamery have partnered with ChopChop Magazine, a fun cooking magazine for families. It is the publication of ChopChop Kids, a non-profit organization devoted to getting kids and families cooking and eating real foods. And not just doing it, but doing it together, as a way to battle childhood and adult obesity.

ccfall2015cover copy

The Fall 2015 issue of ChopChop Magazine, which I have in my hot little hands right now, includes recipes for roasted broccoli, mashed cauliflower, and herb-roasted chicken, among other veggie-filled ideas. And the quarterly magazine is available in both English and Spanish, with ethnically diverse and inexpensive recipes for everyone. So often, when I make food with my kids, we are baking and making sweets and desserts. I love that ChopChop focuses mostly on the healthy mains and sides.

So we are giving away a 1 Year Subscription to ChopChop Magazine AND a $25 Cabot Cheese Gift Box. Open to US Residents only.

You know I am a huge fan of Cabot and their cheese, so I have plenty of ideas for you to use up all that cheddar!

I appreciate the thought that getting kids cooking helps to combat childhood obesity. It makes sense to me that a person who learns to cook with real food ingredients instead of a bunch of processed shortcuts will develop an appreciation of real foods. It also makes sense to me that a diet based on those actual foods will help people, including children, to understand what they are really eating, and I think that kind of consideration is one of the keys to overcoming obesity.

I like them because they’re owned and operated by farmers, and supporting farmers is important to us! I don’t have kids, but I do love to cook with my fiance. He’s taught me everything I know about cooking (I am really more of a baker) and he’s been a huge support since I’ve cut carbs! I don’t have a specific food I like to make with him, grilling meat would probably be my favorite if I was hard pressed to choose, but I do like to watch him make pie! lol I’ve made cheese chips probably four times this week with Cabot cheddar! Yum.

I’m glad I don’t have any children when I think about what a struggle it would be to teach them what’s “healthy” in this day and age. All the flashy advertising and subliminal brainwashing that goes on in regards to food, and all the misinformation out there about what’s “healthy,” is just utterly horrific. When this type of thing comes up I always think of your fish nuggets recipe/blog post where you were telling us about your kids singing the McDonald’s “fish jingle” and begging you for the fish mcnuggets or whatever they’re called…lol. I really admire you for sticking to your guns and making them a homemade version instead. Anyway – the magazine looks like a really good one, even though I don’t have kids to cook with! 🙂

    At 27, I’m still half-kid myself.

My kid self loves cheese in every form, on every thing….and luckily, my adult side knows how healthy cheese is (and knows to snatch up a minimum of 6 packs when Cabot goes on sale).

Needless to say, that box you’re so generously giving away is a mirror image of what I see when I open my refrigerator’s “meat drawer.” (Hummus and turkey, you have good intentions, but again I must relegate you to the back.)

My kids are off at college, so very little cooking is happening with them, these days. But when my kids are home, we make breakfast for dinner. It’s one of their favorite meals. I shove some bacon in the oven, make either waffles or dutch babies (GF, grainfree, sugar free ones, of course) and scramble up a dozen or more eggs! My kids each have their own job to do, Daughter makes the waffles, son makes the eggs, and I make sure the bacon doesn’t burn. Considering the kitchen is the smallest room in my house, It’s a shoulder to shoulder job that we all have a blast doing!

My kids love to bake with their dad, since he’s not as serious about low-carb living as I am. So I would love to have more main dish and veggie inspiration for them. My 7 year-old daughter loves to make cheesy omelets (with more cheese than egg!) and she’s been asking for linguini alfedo, and my 13-year-old son likes to make croque monsieur, so they would both be thrilled with a bog box of cheese!
