Low Carb Chocolate Hazelnut Biscotti Baking MixOne thing I have always loved about the Christmas holidays is the opportunity to give homemade treats and goodies to practically everyone I meet. Good friend or distant acquaintance, it hardly matters. I pass a stranger on the street? Oh here’s a box of homemade delectables, just for you! Because it’s the holidays and giving feels good. Plus I never pass up an opportunity to show off my baking prowess. And I know I am hardly alone in this regard. I’ve known people who start planning months in advance, eyeing holiday cookie and bar recipes, making a list, checking it twice, and stocking the freezer with butter and other crucial ingredients for fear there might be some sort of shortage. I may or may not be one of these people. Suffice it to say that I like to bake and Christmas affords me the opportunity to go wild with it. And then give it all away so I can start all over again.

There is one tiny problem with this holiday baking bonanza and that’s that so many people love to do the same. So we are all giving each other ridiculous amounts of lovely baked goods in the short few weeks of the Christmas season and we all end up with far too much and not enough time to eat it all. Some things freeze well, so there’s always that option, but there’s no question that things lose their freshness even on ice. I don’t want to contribute to the eating of stale baked goods a few months down the line, that would be a travesty. What to do, what to do?

Low Carb Gluten-Free Baking Mix for the Holidays

How about a homemade baking mix that allows your recipient to make and enjoy the goodies in their own sweet time? You can stand out from the crowd by gifting your friends beautifully packaged mixes that don’t require a lot of effort for your giftee. Preferably the sort of thing into which they throw an egg or two and some oil, give it a stir and toss it in the oven. There are plenty of recipes out there like that, but not too many of them are low carb and gluten-free. Well, now you have at least one option for healthy bake mix gift-giving. At the request of my friends at Bob’s Red Mill, I adapted my chocolate hazelnut biscotti recipe into a holiday bake mix, all prettily layered in a mason jar for maximum effect. I’m not going to lie; these biscotti are awesome. Once baked, they keep very well because they are supposed to be dry and crunchy. They even travel well. I know, I brought a few all the way from one coast to the other.

And if you just want to throw the mix together and make the biscotti for yourself, I won’t tell anyone. I promise!

    totally agreed with all the reasons you said above. . I always end up with a ton of cookies so love the idea of gifting cookie (or in this case, biscotti) jars with the ingredients. . love this idea.. and grabbing the recipe!

    I just made this today. Ridiculously delicious, couldn’t help it, I’ve eaten 3 of these. Where’s the nutritional data? I only had semi-sweet choc. chips on hand so mine will have a few extra carbs per each biscotti. In hind sight, I could have used half the choc. chips and half baking chocolate chunks for less carbs. But seriously no regrets…
