This low carb maple pecan granola is packed with nutrients and great flavour. It makes a delicious grain-free breakfast or on-the-go snack!
September has been a busy month for me and I am tired, my friends. And we’re not yet through the month! However am I going to make it to October? I feel like my life went on hyper-drive the moment the kids were back in school. We’ve been working hard to get ready for our cross-country move, we put our house on the market and are going through the typical chaos associated with open houses and showings, and my husband had the final surgery he needed to reconstruct his ankle from his accident last year. And in the midst of all of that, we traveled to Smugglers’ Notch in Vermont so I could speak at Blog Brûlée and then I went down to Baltimore to attend Natural Products Expo East. It’s astonishing to me that I’ve been able to keep the blog going at its regular pace. But you know I love this blog and I love bringing you recipes. I work hard not to let anything interfere with that.
Mind you, I am really not sure whether I am coming or going at the moment. I’ve been on the move so much and every waking moment seems packed with things for me to do and think about. When life gets this busy, it can be really hard to stay the course on a specialized diet. I am sure many of you can relate. It’s hard enough at home to keep up with the need to make my own muffins and breads and low carb meals. But when you are on the move so much, it’s really hard and I find if I don’t have some of my own homemade treats at the ready, I am so much more likely to succumb to temptation.

So it was rather apropos that Swerve Sweetener asked me for a road tripping snack recipe for their September newsletter. I thought about other types of snacks, trail mix and flavoured nuts and such. But I settled on granola, because it’s not just for breakfast. It makes such a great anytime snack, tossing back a handful of granola clusters while you’re driving or walking or hiking. You can also sprinkle it over yogurt or just put it in a bowl with milk or cream. And this recipe makes a nice big batch, so it’s perfect “on the go” food that can be unrefrigerated for 4 or 5 days.

Thanks so much for this recipe. I didn’t have maple extract, so I subbed a brimming 1/4 tsp caramel flavoring, and used a mix of table salt and coarse sea salt crystals instead. It turned out amazing! Good luck with the move

Looks delicious. My question is did you use salted or unsalted butter. I wasn’t sure if I use salted butter if I should still add the salt or if the recipe is already adjusted for that. Thanks!

I love salt so I typically use salted plus additional salt. But I have a seriously high tolerance so if you don’t, use unsalted.
