Well, this is just about the most perfect recipe to follow up my book review yesterday. In case you missed it, I reviewed the work of Nina Teicholz, a fabulous book called The Big Fat Surprise. It’s a wonderful and engaging expose on the state of modern nutrition and how we got here. There’s no need for me to say it all again, but suffice it to say that we got it all wrong and we should be eating more fat, particularly more saturated fat, not less. And this recipe is just the thing to get you going on your healthy high saturated animal fat diet. What do we have here? A fatty, flavourful cut of beef? Check. Butter? Check. Heavy whipping cream? Got it!
Oh and some mushrooms and garlic too, because vegetables are still good for you. As long as you eat them with a heart-healthy dose of delicious, satisfying saturated fat. This is one of those melt-in-your-mouth recipes. We eat it at least once a week!

I don’t think the protein count is right. Not sure you can change it, but it would be nice to know what it truly is for those of us who are watching our macro-nutrients.
The dish does look scrumptious! I can almost smell it!

No, you are absolutely right. A digit got left off there, it should be 41.76 g. That assumes an 8 ounce steak. When I eat this, I find I can’t eat more than half my steak (I cook it with all the fat on and make sure I eat all the fat). Then I load up on veggies!
