Well, this is just about the most perfect recipe to follow up my book review yesterday. In case you missed it, I reviewed the work of Nina Teicholz, a fabulous book called The Big Fat Surprise. It’s a wonderful and engaging expose on the state of modern nutrition and how we got here. There’s no need for me to say it all again, but suffice it to say that we got it all wrong and we should be eating more fat, particularly more saturated fat, not less. And this recipe is just the thing to get you going on your healthy high saturated animal fat diet. What do we have here? A fatty, flavourful cut of beef? Check. Butter? Check. Heavy whipping cream?
