Delicious low carb chocolate hazelnut popsicles. These frozen keto treats are a great way to welcome the warm weather.
Spring seems very reluctant to come to the Pacific Northwest. Very reluctant indeed. It’s hiding around the corner like a shy child whose parents just can’t coax out into the open. You can sense it’s there and every so often, you see Spring’s face peeking around the corner. And in that moment, you feel a burst of warmth and delight and you think you’re going to get that sweet little thing to come out and play. But the minute you focus your attention on it a little too much, it spooks and disappears again. Nothing you do is going to hurry that Spring along.
Seriously, people. I am still wearing my winter coat most mornings when I venture outside. And I just went to the store and bought some sweet little spring tops and now they sit in my closet, still in the bag. As impatient as I am to wear them, I don’t see it happening in the foreseeable future. This elusive Spring is driving me mad.
But that’s not going to stop me from making delicious keto popsicles. No way, no how. I may be shivering in my winter coat as I eat them but it’s springtime in my mind and I crave warm weather foods. And low carb ice pops are so easy to make and to eat. While I adore making my own ice cream, popsicles are like a cheap and easy thrill. Just blend all the ingredients together, pour into molds (which are always inexpensive), add the sticks and freeze. A few hours later, you have your healthy frozen treat. Even if the weather refuses to cooperate.

3.5g Total carbs is too high for you? It’s only 2g Net if you do things that way.

Oh, I just read that more carefully. Too high in FAT…well, I believe strongly that a low carb diet is supposed to be high in fat (and only moderate in protein). There are ways you can cut this back in fat, though. Use Neufchatel cheese in place of the cream cheese, and more almond milk rather than cream. Voila, a lot less fat.

But that’s the whole point of a ketogenic diet. Low carb, high fat, moderate protein. 5% carbs (veggies) 20% protein and 75% healthy fat. I’ve dropped 17 lbs in 7 weeks and I’m disabled, so no emphasis on exercise.

If you do some REAL RESEARCH my friend, you will see that FAT is good for you. Not veggie oils and garbage fats….but good fats like avocado, coconut oil, olive oil. Your brain is made from fat and NEEDS fat to survive. Studies show that low fat diets are one of the main causes of Alzheimer and other brain diseases.

These are so incredibly good! I have made them several times. Since I have to be dairy free, I used nutpods dairy-free, sugar free creamer (the hazelnut flavor is particularly amazing in this recipe) in place of the heavy cream and kite hill almond “cream cheese.” Once reserved a little of the mix in the refrigerator because one popsicle mold was missing – and it makes an incredibly good spread on waffles or pancakes. Thank you for such a great recipe!

Thank you! These are awesome and I can’t seem to make these fast enough to keep any in the freezer for my kids! The first time I made them I mistakenly grabbed orange extract instead of vanilla from the pantry and thought that I may have ruined them. I am making my 3rd batch today and my kids are requesting the chocolate/orange flavor again!
