Healthy Dairy-Free Chocolate Frosty

Sometimes it’s really fun to mess around with healthy ingredients and see if you can fool your tastebuds. Don’t get me wrong, I actually think most healthy ingredients taste really good on their own. With the exception of beets, which taste like dirt to me, I love most fresh greens and veggies just as they are, with minimal cooking and seasoning. So there isn’t usually a need to trick my tastebuds to get healthy foods into me. My kids, on the other hand, can not always be persuaded to eat the healthy options when they LOOK like healthy options. I still push the fresh, real foods because I know eventually they will have a more sophisticated palate that can appreciate them. But sometimes it really is fun to see if we can trick ourselves into eating greens that don’t taste like greens.

Low Carb Keto Chocolate Frosty Recipe. LCHF THM

The lovely folks at Cut ‘N Clean Greens sent me many a package of their ready to eat kale for just such a purpose. I was so successful with the bok choy brownies from their other brand (Jade Asian) that we thought we’d attempt another dessert recipe. And given that it’s the dog days of August, they asked for something frozen. I thought about kale pops and kale ice cream but they already had recipes for those. So I thought it might be fun to make a Chocolate Kale “Frosty”. And for another fun twist, I did it dairy-free with coconut milk. But you could easily make it with cream as well.

Keto Dairy-Free Paleo Frosty Recipe

To make it easier all around, I chose to simply freeze the coconut milk into ice cubes and blend it in the blender, rather than putting the work into making an ice cream base. It worked beautifully and I honestly couldn’t stop sipping at it. It makes about 2 to 3 servings, and I had to exercise my self control enough to have some for when the kids got home from camp. They loved it too and had no idea they were getting some healthy kale in there!

    Lol-I think beets taste like dirt too! I just can’t bring myself to eat them. When I’ve said that to people they look at me like I’m crazy.

            Agreed Carolyn, I really, REALLY want to like them, they are nutritious, and I can tolerate a small amount in an otherwise delicious salad, but don’t give me a big plate o’ sliced beets. I keep trying them every once in awhile, thinking they might have changed, or my taste buds might have changed. Sigh. No.

            If you add a half beet with a banana and hwc, kale, and a 1/2 an apple you won’t taste the beets.

    Fresh beets are definitely dirt flavored. I’ll eat em pickled till the cows come home. I’m making this smoothie after I “clean all the things” in my house. I’ve got fresh kale in the garden to use up. Thanks for making this low carb thing easy. ?

    your recipes always call for full fat coconut milk. Would this recipe also work with the lite version??

      Of course my recipes call for full fat…this is a low carb, high fat diet. However, if you want to try light, you can give it a go. I don’t think it will be as thick but should be pretty tasty.

      No, the chocolate covers it up. You could use cream instead, though.

    Call ME crazy but I LOVE beets. Don’t think they taste like dirt at all. Too high carb so I rarely eat them but when I do look out. ?

    Lol I love beets, especially fresh, home cooked ones and have ever since I was an infant. Love the addition of some healthy greens to the smoothie. It certainly never hurts to hide it in there!

    I need to try this for my kids. I love red beets and once I had leftover cooked red beets. Not enough to can or wait for another meal so I put them into my blender with tomato sauce and added them to a meatloaf. No one knew. They thought it tasted live ravioli.

    In the Netherlands, one of our national dishes is kale mashed with potatoes. It is easy to make with pre-cleaned and cut kale in bags at the grocery. Made a low-carb version last night and had too much kale since our oldest son went off to college. Just found this and was wondering what to do with my leftover frozen kale…now to go start freezing coconut milk… Thanks for the idea!
