Sometimes it’s really fun to mess around with healthy ingredients and see if you can fool your tastebuds. Don’t get me wrong, I actually think most healthy ingredients taste really good on their own. With the exception of beets, which taste like dirt to me, I love most fresh greens and veggies just as they are, with minimal cooking and seasoning. So there isn’t usually a need to trick my tastebuds to get healthy foods into me. My kids, on the other hand, can not always be persuaded to eat the healthy options when they LOOK like healthy options. I still push the fresh, real foods because I know eventually they will have a more sophisticated palate that can appreciate them. But sometimes it really is fun to see if we can trick ourselves into eating greens that don’t taste like greens.
The lovely folks at Cut ‘N Clean Greens sent me many a package of their ready to eat kale for just such a purpose. I was so successful with the bok choy brownies from their other brand (Jade Asian) that we thought we’d attempt another dessert recipe. And given that it’s the dog days of August, they asked for something frozen. I thought about kale pops and kale ice cream but they already had recipes for those. So I thought it might be fun to make a Chocolate Kale “Frosty”. And for another fun twist, I did it dairy-free with coconut milk. But you could easily make it with cream as well.
To make it easier all around, I chose to simply freeze the coconut milk into ice cubes and blend it in the blender, rather than putting the work into making an ice cream base. It worked beautifully and I honestly couldn’t stop sipping at it. It makes about 2 to 3 servings, and I had to exercise my self control enough to have some for when the kids got home from camp. They loved it too and had no idea they were getting some healthy kale in there!
