Featuring some of my best low carb recipes from April and May. You don’t want to miss these!
As always, I have been a busy little bee, creating a ton of great recipes and other content for some great sites and publications. It’s a good thing I love doing what I do, because I do a lot of it! So it’s time for another low carb recipe and article collection. I don’t want you to miss out on any of the good stuff. There are some wonderful Mother’s Day recipes here too. I recommend the peanut butter and bacon scones, those were a huge hit. Or the lemon whoopie pies. Actually, never mind, I recommend it all…
Without further ado, check out some of these great posts from the past month:
Fish Taco Lettuce Wraps: Cinco de Mayo may be over but you need these spicy lettuce wraps in your life! They’ve got a great kick and the cilantro cream sauce is the perfect compliment.
Peanut Butter & Bacon Scones: Peanut butter and bacon was something of an obsession when I was growing up. We used to make fried peanut butter and bacon sandwiches. Well, now you can get those same great flavours in a delicious and much healthier scone!
Raspberry Meringues: Did you see these sweet little things I made for Swerve Sweetener? They are ever so light and airy but ever so delicious.
29 Creative Cauliflower Recipes: Cauliflower, the low carber’s saving grace. It is infinitely versatile and you can never, ever have enough good ideas for using it.
Cherry Chocolate Almond Biscotti: I will never stop loving biscotti, that dried, almost stale biscuit so perfect for dipping in hot coffee! Thank goodness there are so many wonderful flavours!
Sour Cream Coffee Cake: This cake is all cinnamon-y goodness, perfect for first thing in the morning or as a pick me up in the afternoon.
Lemon Curd Whoopie Pies: Want to make Mom something awesome for Mother’s Day? Or are you mom, looking for a nice treat for yourself? These low carb lemon curd whoopie pies oughta do it!
19 Ridiculously Good Rhubarb Recipes: It’s no secret that I love rhubarb. And it’s a great low carb ingredient to add to your repertoire. Many other bloggers seem to love it as well!
Sweet & Sour Chicken Skewers: Healthy Chinese food alert! Okay, so you aren’t going to find these at your local Chinese restaurant but they are easy to whip up and fantastic over cauliflower rice.
Eggs Benedict Cups: No need for an English muffin or any bread substitutes. Just make little cups out of the Canadian bacon, and you’ve got yourself the perfect Eggs Benny!
Cheddar Sandwich Crackers: I am always trying to battle the junk food my kids see at school and in commercials. And the oh-so-ubiquitous vending machines. These are my answer to the junky cheddar crackers kids love!
Baking with Low Carb Sweeteners: This is a great primer for people new to the low carb way of life.

I finally got around to making your Lemon Curd Whoopie Pies!! They were soooo fantastic!! I had printed off the recipe last May & just made them this week. When I referred a friend (who thought they were amazing when I shared one with her) to your website to search for the recipe for herself…. it did not come up on the search… so we had to Google it, and found it on the sheknows.com website. That lemon curd recipe is so creamy! I love it. You are either an artist or a scientist. I am not sure which. You should bring the recipe to the forefront so it is not missed!
