Who says you can’t have granola on a low carb diet? This grain-free Peanut Butter Power Granola is sure to satisfy that craving for cereal! Now updated with a how-to video.
My keto peanut butter granola recipe will become an instant favorite. My whole family loves this grain-free and sugar-free cereal recipe, and now I’ve got a how-to video so you can see just how easy it is to make. Low carb breakfast never looked so good!
How To Make Low Carb Granola
Many moons ago, after her divorce, my mother started doing a series of Outward Bound courses. She did the basic three-week canoe trip in northern Ontario. She did mountaineering in the Rockies. She did a sailing course in the Caribbean. She even did a dog-sledding course in Yukon or the Northwest Territories or some other frigid, godforsaken place. There is no question that these courses were integral for her in rebuilding her life and becoming a confident, self-assured single woman in her 40s. All very impressive stuff, indeed. But perhaps the most important thing she gained from these exploits was the world’s best granola recipe. Okay, I hear snorts of laughter at that. But this is a food blog, what did you expect me to say?
In all seriousness though, along with all the character-building stuff came a tried and true recipe for Outward Bound granola that we made for years. Years and years and my mother still makes it to this day. Her household is not allowed to be without a batch of the granola for more than about 5 minutes. It’s gone through many permutations since its origin, including a decadent chocolate version that my older brother invented when he added chocolate chips to warm-from-the-oven granola. These days it’s filled with all sorts of healthy stuff, grains and seeds and dried fruits. So you can see I come by my love of granola honestly.
The problem is that your typical granola is not so healthy for ME. The copious amount of oats, other grains and lots of sugar mean that just looking at it gives me a blood sugar rise. And I will confess that I miss granola, along with other sorts of breakfast cereals. I invented my own grain-free, sugar-free granola early on in this low carb journey and it was delicious. So when Bob’s Red Mill sent me some wonderful, gluten-free products to review, I decided to try another low carb granola, this time with peanut butter and lots of protein. A power breakfast to say the least (especially mixed in with some Greek yogurt…mmmmm).
Bob’s Red Mill hardly needed to ask me to review their products. I’ve been a fan for a long time and I always have some of their stuff in my cupboards. Even before they sent me a package of goodies, I already had their coconut flour, xanthan gum, regular flax meal, flaked coconut and oat flour on the go. I’ve now got hazelnut meal, golden flax meal, guar gum and GF all-purpose flour (for my kids) to add to the collection. They have such a wide variety of gluten-free products and I’ve had great success with every one I’ve tried.

- 1 1/2 cups almonds
- 1 1/2 cups pecans
- 1 cup shredded coconut or almond flour
- 1/4 cup sunflower seeds
- 1/3 cup Swerve Sweetener
- 1/3 cup vanilla whey protein powder OR collagen protein powder
- 1/3 cup peanut butter
- 1/4 cup butter
- 1/4 cup water
-
Preheat oven to 300F and line a large rimmed baking sheet with parchment paper.
-
In a food processor, process almonds and pecans until they resemble coarse crumbs with some larger pieces. Transfer to a large bowl and stir in shredded coconut, sunflower seeds, sweetener, and vanilla protein powder.
-
In a microwave safe bowl, melt the peanut butter and butter together.
-
Pour melted peanut butter mixture over nut mixture and stir well, tossing lightly. Stir in water. Mixture will clump together.
-
Spread mixture evenly on prepared baking sheet and bake 30 minutes, stirring halfway through. Remove and let cool completely.

Thanks for the recipe! I am in no way gluten intolerant but since January of this year have removed most gluten from my diet because of inspiration from my best friend. My 7 month conversion in baking has been challenging (and fun!) and I have to say that I really enjoy Bob’s Red Mill brownie mix–it works great for stuffed brownies! I also have tried the almond meal, xanthan gum, white rice flour, tapioca flour & GF oats.

Almond Flour. I haven’t tried very many yet – 3 to be exact. But I had found some low carb (happen to be GF) recipes. I had every intention of making MY OWN almond flour for weeks and weeks (and weeks). And I could not make the two recipes I wanted to try w/o it. Finally, one day, by chance I found myself in a Whole Foods and standing right in front of the almond flour and coconut flour – and I thought. forget about it. BUY the almond flour to see if your recipes are as great as you thought you may never get the stupid homemade almond flour !!!! And they were. And I still can’t find time to try to make it, so I bought the coconut flour too and just got another almond flour. !!

I battle severe Fibromyalgia/CFS and have found that following a low carb diet helps ease the pain. I ran across your FaceBook site and have tried quite a few of the recipes there and also from this blog. Great info, which generally helps keep me curb my cravings of carbs. I use a lot of Bob’s Red Mill products. What a Blessing your site and their products are.
Now…to find a site that sells willpower to keep me on track! :o)
Carolyn says
LOL, if you find a place that sells willpower, let me know! I could use some of that at times. I am fascinated that low carb helps battle Fybromyalgia. Do you follow gluten-free as well? Makes me wonder if gluten has anything to do with it…
Alisa says
While doing the low carb, I avoid all wheat products, which of course are rich in carbs ;o( I’ve wondered also about the gluten factor. Not overly sure of the correlation of the Fibro/CFS relief via a low carb diet, as there seems to be no rhyme or reason to the peaks and valleys in their symptoms, nor could my specialist that I was referred to by Mayo Clinic. For myself, I seem to feel better for the most part while sticking strictly to the very low carb per day. I tend to use Almond and Coconut flours to replace the wheat flour.
I have done some research to see if anyone has noticed the same relief and came up with a few docs/clinics that have wrote on the subject. Dr. Paul St Amand has stated that patients with fibromyalgia tend to have increased carbohydrate cravings and low carbohydrate diets may reduce their pain and fatigue.. http://www.ei-resource.org/articles/related-conditions-articles/hypoglycemia-%11-dr.-st.-amand/
Hopefully, one day they will find a cure. In the meantime… ;o)

Carolyn says
I think this would work just fine in a dehydrator, although I dont’ know how long you’d have to do it for. I don’t soak my nuts, but I don’t see how that would hurt.
Amber says
I love Red Mill Almond Meal. I use it for crusts, and for pancakes! Yum!

This seems like the perfect recipe to make for my boyfriend and I as we are kick starting our diet! I love the site and will definitely be referencing it more for some healthy low-carb recipes!
Michelle says
How do you pick just one favorite when it comes to Bob’s Red Mill? Almond Flour–great shortbread, Golden Flax Meal–a must for edible MiM’s, Coconut Flour–a great substitute for cornmeal…the list goes on and on.
Patti says
I found your blog today and am so happy. I use Bob’s Red Mill’s items for so many things. Thank you for this Granola recipe as this is what I put in my morning Fage.

Ground Flax Seed!!!!

I just made a batch of this granola and it is delicious. I only had choc protein powder so I used that. I have found that this is unbelievably good on ice-cream. I imagine it would make a great cheesecake base too…..definitely going to try that 🙂
Thanks
Love the blog.

These are YUM. I used my own homemade peanut butter, which also has flaxseed oil. I can’t get enough flax in my life!

Heather from Canada says
This was incredible! I added a healthy splash of cinnamon to mine, plus some leftover dried cranberries (recipe also from this site). I like it better than the old granola with grain and sugar! Will definitely keep this stocked in my pantry from now on; will help with days when I’m tired and not sure what I feel like eating. I also swapped out the peanut butter for almond butter since I don’t eat peanuts. Thanks!!
Carolyn says
Sounds like some great substitutions/additions, Heather!
Heather from Canada says
Yes, so yummy I found myself standing over the pan and shoving it in my face every time I walked through the kitchen! Not something I do very often. So thanks!! I’ve been wanting something snacky so desperately!
Jeanette says
I really like the Golden Flax.. it makes such a difference in my baked goods

Thanks for the recipe! I love Bob’s red Mill products! It is a lot more expensive to live a life of ‘clean’ eating, wheat & gluten free, when it comes to the groceries, but it has been so rewarding! The past 6 1/2 months I have improved my joint pain and inflammation by 80%, my mental alertness has tripled and I have lost FIFTY pounds ! Good luck to us all!!

Hi, I have been a lurker on your site for a few months now after searching for low carb recipe substitutes. I have PCOS and thyroid problems, and am a true sugar addict in every sense of the word. Obviously this is not a good combo…BUT you are one of the people online that have helped me tremendously with managing my health issues and food. Bob’s Mill products are an integral part of my food and sugar management, too. Right now in my cupboard I currently have the coconut flour, almond flour, xanthan gum, flax seed meal, and wheat gluten. I just bought more coconut flour two days ago (and it was sold out in the first 3 stores I went to!) so to say I utilize Bob’s Mill products is an understatement. I would love a gift card because Bob’s Mill products can be a little expensive for my family, so every little bit helps…but either way, thank you for your site, sincerely. I appreciate all the effort you put into what you do!

This has nothing to do with the contest, but I’m printing this recipe and making it for the third time…my husband, Mr Picky Englishman, loves it! We live in Malaysia and it’s been a struggle to get ingredients–but at last we have a pretty full complement and I’m headed to California for a visit tomorrow (and bringing back loads of Swerve at long last).
Hubby doesn’t like eating low carb, misses all his favourites, and it’s really hard to do here in rice-and-noodle land…BUT his blood sugar is under control at long last (TypeII, still on meds at the moment) and so will live with it.
And this is one of his favourites, thank you SO very much for it!
Carolyn says
Oh, Malaysia, I bet that is tough to get the ingredients!
Kairi says
I love Bob’s Red Mill products!

Finally made this today and it is yummy! I added some Hershey’s Special Dark Chocolate Chips, which gives it extra yumminess (because seriously chocolate and pb, right!?!?). I had to *force* myself to eat what couldn’t fit in my largest tupperware. I should have stayed in the kitchen while I secretly snacked because I ended up sharing this with my 5 year old (and she can chow down!!). Thank you, Carolyn, and keep up the great work!
Anna says
What would you recommend as a substitute for the flax? Trying to limit my consumption a little bit. Would chia meal have the same effect?
Carolyn says
Chia absorbs a lot of liquid so might make it too moist but you could certainly try it.
Annie says
Can i substitute whey protein powder Caroline?
Thanks for everything!!
Carolyn says
In this recipe, you can leave it out altogether.
cindy says
I have not found a Bob’s Red Mill product I haven’t loved yet. Right now my fav is their steel cut oats, Irish Oatmeal.
Paula says
I’m new at all of this, I do not have stevia. I only have swerve, do I just add a little more of that? Thank you
Carolyn says
Yup! I’d say another 1/4 cup should do it.
stacy says
I’ll have to find a substitute for the pecans, but I’ve got to try this. I used to make huge batches of Alton Brown’s granola, before we went LC, and had it on my Greek yogurt for breakfast.
scarlett says
For the vanilla whey powder, can I sub it for unflavored whey powder and maybe a tsp of vanilla extract? So excited to try this out!!
Deanna says
Your mom sounds like a very inspiring person.
Thank you for all you do. I have been wheat-grain free for only a month but your recipes have been incredibly helpful. I LOVE to bake, so it’s been wonderful to be able to continue doing so while sticking to my new life choices. You are really making a difference for so many.
Lee Ann says
My husband will be thrilled to see granola back on the menu. 🙂
Stephanie Otis says
I made this today and it’s fabulous!! I have been looking for a low carb granola that didn’t have coconut and this is perfect ?
Carolyn says
Wonderful!
Alizah says
This muesli is delicious and I love that it is low in carbs but when I entered it in to my food diary it came up as 499 calories per serve. I hope I have done it wrong. Has anyone got a different result?
SST says
I put these ingredients into MyFitnessPal Recipe Builder and the nutritional data for carbs was much higher than yours. 404 calories, 12g carbs, 36g fat, 5 fiber.
Carolyn says
That is likely because My Fitness Pal is calculating the carbs from the erythritol. As these do not affect my blood sugar, I don’t count them and I state this clearly in my nutritional disclaimer.
SST says
Thanks for letting me know. It doesn’t count the stevia extract but does count 12g for the entire recipe for the granulated Swerve. I removed that and it calculated to 12g carbs…closer to your 9.9. Probably a matter of brands used. I will be trying this today.
Angela says
Are all the nuts and seeds raw before adding?….I only have roasted everything, except the pecans…any way I can still make/use them for this recipe?
Carolyn says
You should be able to use them.
Bonnie Oler says
Can this be made into bars?
Also do u think that I can use mixed nuts for another version of this?
Thank you
Carolyn says
You’d probably need an egg white to hold these together. Use whatever nuts you like!
Rachel says
Can I make this with maple syrup or honey instead of the artificial sweeteners, if so what would be the measurements? I’m autoimmune and have a bad immune response to all artificial sweeteners.
Carolyn says
I really couldn’t tell you the measurements, i don’t use those. But I am sure it would work with them.
Jamie says
Hello! I am interested in trying this. I have a few questions though. Can I grind my own flax seed meal from flax seeds? Would I use the same amount? Is there a substitute for the whey protein powder? Will “sweet drops” work well for the stecia extract drops? Can the “Swerve” be powdered or does it have to be granulated? I look forward to your input. Thank you!
Carolyn says
Yes, you can use your own flax in the same amount. You can skip the whey protein if you like. The sweet drops will be fine, as will the powdered Swerve.
Alison says
I see that this recipe makes 10 servings, but what is the actual serving size? Easier to measure out portions if I know the individual serving size. Thanks!
Carolyn says
About 1/3 cup.
Alison says
Thanks!
Janie says
Today is the second time I have made this and it is easy to make and sooooooo delicious!! Love your recipes.

We’ll took me a while to get to log a comment but I felt I must. This granola is now a staple in my house. Always ready as a quick breakfast cereal to pour a little cream/water over, add a little frozen blueberries and I’m in heaven. My son stopped by, ate it up and took a jar home with him. Our cereal fix is now satisfied. We are firmly ketoed. Thank you for all you do Carolyn. You have saved me and my family from diabetes and heart disease to name a few. Much appreciated!!!
Carolyn says
Thanks so much!
Wendy says
How do you store this once done so that it lasts the longest Time? Thanks so much!
Carolyn says
Air tight container.

Amber Van Elgort says
Hello ! I made this granola and it’s great, but how many calories in total are in a serving ? I’m new to Keto and am working on tracking my macros :
Fat?g and Protein?g please? All I see is carbs for nutritional facts. I would love or to add it to my fitness pal. Thanks
Amber Van Elgort says
Sorry my email address was wrong in the above comment
Jennifer Blake says
I’ve been wanting to try homemade granola for a very long time and have always been intimidated by it for some reason. This looks like a perfect protein packed granola that I can use for an easy go to breakfast with my yogurt (which normally doesn’t sustain me very long).
Bev says
Hi! I’m definitely going to make this granola! What would you says serving size is-1/2c?
Thanks! Bev
Carolyn says
I am having issues with my recipe card. I put the serving size in yesterday but it disappeared on me! It’s about 1/3 cup.
Bev says
Thanks!!
Bev says
I’d probably want to eat more than that lol
Holly says
Thank you SO much for this recipe! Granola has always been my weakness and the thing I miss the most after becoming keto. I can’t wait to make this ASAP! Also, I finally bought your cookbook at Costco! YAY!!!!!
Agness of Run Agness Run says
This is such a perfect breakfast idea which I can’t wait to try. I love such healthy and nutrient-dense recipes! 😉
Holly says
I just made a double batch of this. You are brilliant!!!!! It is SO delicious! I think I will be making this on a weekly basis!!!!!!!!
Diane says
How do you store the granola and how long will it be good for?
Andi says
Um… yeah. This stuff is dangerous. I’ve been keeping a pint jar of it in the fridge and the rest in the freezer… as if that’s somehow going to slow me down (hahaha…). I love a handful of it cold right out of the jar without any yogurt, milk or cream, in fact I might even like it best straight from the freezer 🙂 Yummm.
Carolyn says
This is AMAZING!!! I didn’t have sunflower seeds thanks to the monsters that think they need to eat here too lol so I subbed in hemp hearts.
Kristy Smith says
Hi! I made this today and it’s quite delicious. I didn’t have protein powder so I just added a bit of almond flour and hemp hearts to make up for it. Turned out nicely but it’s not super crunchy, but a bit soft. Wondering if this is how its supposed to be, if not, would you recommend cooking a bit longer or think its related to the protein powder? Thanks so much!
Carolyn says
No, it should absolutely crisp up as it sits. I don’t think the protein powder would make that much difference, you may need to have baked it a bit longer.
Melissa says
Hi Carolyn! Made this and it was amazing and the whole house smelled like a dream!
Quick question – how long does it keep? Have stored it in an air tight container so far and it really crisps up after cooling down!
Thanks for sharing!
Carolyn says
I’ve kept it for up to a week or so!

Jennifer Blake says
Simple, healthy and, most importantly, delicious!
Vicki says
Enough about Bob, lol, this granola is awesome! I made it yesterday, and just had my first bowl with some cream. So good! Thank you!
Dawn says
I made this a few days ago. I threw in some pumpkin seeds that I had leftover. It was delicious! I love having “cereal” back. I do love my eggs but it’s a nice change and option.
B Felaino says
I LOVE this granola!
Cindy says
This is the best doing keto and was craving cereal this was a great fix with almond milk ,my husband and I are hooked on it .
Molly says
Oooooh, this is SO GOOD and easy! I used unsweetened shredded coconut and vanilla whey powder. I left out the Swerve just for kicks, and it’s still sweet enough for me. Delicious!
Molly says
Forgot to rate it. D’oh!
Lesley says
I know your recipe is written with butter, but do you think coconut oil or ghee would work? I find it very annoying when someone basically wants to change the whole recipe and then asks the person who posted it if it will turn out ok. I’m definitely not trying to change it because I think it sounds amazing!!! (I just can’t do butter) My 10 year old son has recently discovered his love for granola, but as you said, lots of granola recipes are not healthy at all. Can’t wait to try this one!
Carolyn says
I think it would work well with either and I appreciate your concern about changing the recipe too much! Coconut oil will have more of a strong taste, just keep that in mind.
Glenna says
Guestimating the serving size to be 1/2 cup? Can you please confirm. Thanks!
Carolyn says
As with most granola, it’s more like 1/3 cup. Very nutrient dense.
Chris says
do you think natural peanut butter would work even tho its not as thick as regular? & to replace the butter with coconut oil?
Carolyn says
yes it will be fine.
Debby says
Does this work with Monk Fruit as a sweetner?
Carolyn says
It should!
Lisa Cowan says
Thank You, Thank You, Thank You, No Seriously Thank You for this granola recipe!! My husband and I have gone Keto since the end of March to help him bring down his A1c and it’s been amazing, but one of my favorite breakfasts was low-carb yogurt with granola. Now I can have it again :))
My Q is: how much of a cup does a serving measure? I just made this last night and didn’t have a total measurement before he dug into it! Thanks again!! You’re one of my most reliable recipe sites.
Carolyn says
A serving is about 1/3 cup, which is standard for granola.
Kathy says
Thank you for this recipe. My fiance is just starting a new job and needs a snack he can bring around with him in a baggie . . . and cheese and pepperoni just won’t cut it on the showroom floor 🙂
Please, cause I suck at the math, what it the net carbs per serving?
Thank you again!
Carolyn says
Just subtract the fiber from the total carbs.
Sharon Mikulec says
I want to make this but don’t have any whey protein powder, can you leave out or substitute it with something else?
Carolyn says
In this recipe, you can leave it out.
Ronda says
Will this recipe work if I leave out the whey protein?
Carolyn says
Yes it will.
Kim says
Mine didn’t clump together much, maybe too much water? I used the whole 1/4 cup. It tastes amazing though so that’s the main thing. Hubby loves granola but complains about how much sugar is in it. I’m hoping this will satisfy his cravings.
Margaret Freeman says
It is absurd how good this is with ice cream. I make it once a week now, absolutely one of my favortite keto recipes. Thank you sooooo much
Carolyn says
Wow I’ve never paired it with ice cream but now I need to!
Mary Frances says
With the sunflower seeds, are those hulled or do you throw them in shells and all? I don’t care for the shells but I’ve never seen them sold without them. I might substitute hemp hearts.
Carolyn says
Hulled, sorry! I see the raw seeds all the time at Whole Foods and such.
Linda says
Major hit in our family! Making second batch only days after the first. Thank you!
Lisa says
Arggg! I did everything like I was supposed to but I forgot to add the water at the end. Maybe it will be ok.
Carolyn says
It should be fine, it just may not clump together as well.
Destiny says
I just made this. Delicious!!!
D says
6 Stars really! I love…LOVE this granola. IT’s the best and I know because I’ve made so many. I literally will wake in the morning and say….Granola…MUST have! Your recipes save me. When I started keto, I was following Maria Emmerich’s blog. Her stuff scared me and didn’t taste really good. When I found you I realized keto CAN look different for different people. Your approach is easy and kind. Your stuff is user friendly. You turned me onto Swerve and it’s delish. I just like your approach and appreciate your hard work. My granola is in the oven right now. Thanks for helping me stay on track. I’m a SIBO suffered and found out grains ruin my gut. This eating style is totally doable with your blog!
Carolyn says
Hi D, Thank you so much. I am delighted to hear it. I need to make more granola, now that I think of it!
