My keto peanut butter granola recipe will become an instant favorite. My whole family loves this grain-free and sugar-free cereal recipe, and now I’ve got a how-to video so you can see just how easy it is to make. Low carb breakfast never looked so good!

How To Make Low Carb Granola

Many moons ago, after her divorce, my mother started doing a series of Outward Bound courses.  She did the basic three-week canoe trip in northern Ontario.  She did mountaineering in the Rockies.  She did a sailing course in the Caribbean.  She even did a dog-sledding course in Yukon or the Northwest Territories or some other frigid, godforsaken place.  There is no question that these courses were integral for her in rebuilding her life and becoming a confident, self-assured single woman in her 40s.  All very impressive stuff, indeed.  But perhaps the most important thing she gained from these exploits was the world’s best granola recipe.  Okay, I hear snorts of laughter at that.  But this is a food blog, what did you expect me to say?

 

Grain Free Low Carb Granola

In all seriousness though, along with all the character-building stuff came a tried and true recipe for Outward Bound granola that we made for years.  Years and years and my mother still makes it to this day.  Her household is not allowed to be without a batch of the granola for more than about 5 minutes.  It’s gone through many permutations since its origin, including a decadent chocolate version that my older brother invented when he added chocolate chips to warm-from-the-oven granola.  These days it’s filled with all sorts of healthy stuff, grains and seeds and dried fruits.  So you can see I come by my love of granola honestly.

Low Carb, Gluten Free Granola

The problem is that your typical granola is not so healthy for ME.  The copious amount of oats, other grains and lots of sugar mean that just looking at it gives me a blood sugar rise.  And I will confess that I miss granola, along with other sorts of breakfast cereals.  I invented my own grain-free, sugar-free granola early on in this low carb journey and it was delicious.  So when Bob’s Red Mill sent me some wonderful, gluten-free products to review, I decided to try another low carb granola, this time with peanut butter and lots of protein.  A power breakfast to say the least (especially mixed in with some Greek yogurt…mmmmm).

Low Carb Peanut Butter Cereal Recipe

Bob’s Red Mill hardly needed to ask me to review their products.  I’ve been a fan for a long time and I always have some of their stuff in my cupboards.  Even before they sent me a package of goodies, I already had their coconut flour, xanthan gum, regular flax meal, flaked coconut and oat flour on the go.  I’ve now got hazelnut meal, golden flax meal, guar gum and GF all-purpose flour (for my kids) to add to the collection.  They have such a wide variety of gluten-free products and I’ve had great success with every one I’ve tried.

Ingredients
  • 1 1/2 cups almonds
  • 1 1/2 cups pecans
  • 1 cup shredded coconut or almond flour
  • 1/4 cup sunflower seeds
  • 1/3 cup Swerve Sweetener
  • 1/3 cup vanilla whey protein powder OR collagen protein powder
  • 1/3 cup peanut butter
  • 1/4 cup butter
  • 1/4 cup water
Instructions
  1. Preheat oven to 300F and line a large rimmed baking sheet with parchment paper.
  2. In a food processor, process almonds and pecans until they resemble coarse crumbs with some larger pieces. Transfer to a large bowl and stir in shredded coconut, sunflower seeds, sweetener, and vanilla protein powder.
  3. In a microwave safe bowl, melt the peanut butter and butter together.
  4. Pour melted peanut butter mixture over nut mixture and stir well, tossing lightly. Stir in water. Mixture will clump together.
  5. Spread mixture evenly on prepared baking sheet and bake 30 minutes, stirring halfway through. Remove and let cool completely.

    I use a lot of the Bob’s Red Mill products as well (coconut flour, unsweetened coconut flakes (to make homemade coconut milk), xantham gum and soy flour. But, by and large, my favorite product is definitely the coconut flour. I buy it by the 4 pack on amazon since we use it so much in our house!!

    Q-does oatmeal affect your blood sugar a lot? It’s the one “higher” carb thing that I actually eat. Just curious how strongly it affects you and if you ever eat even a small amount. P.S. I am definitely going to make this granola!! My kids and I both love the stuff.

    I’ve done an Outward Bound course before. I was much younger than my 40’s and it was way tough. Your mom’s amazing. The granola is as well. I remember the stuff we had back then and even though it was good, it didn’t look anything like what you’ve got up there!

    I totally agree regarding typical granola not being “health”. It has so much sugar in it for one thing!

    This is a great idea for a giveaway! My favorite Bob’s products are graham flour, chickpea flour, coconut flour and their arrow root. I also use their unbleached AP flour, and LOVE their flax mill. I sprinkle it on everything!

I used to use his corn meal and could have bought stock in steel cut oats, but since I’ve gone back to low carb I must admit I just stayed away from his products thinking he no longer had anything for me 🙁 I would love to starting using his products again AND make this recipe!! I’ve been craving granola and this looks FANTASTIC!!!

    Wow! LC granola… who’d a thunk? Kudo’s to you for coming up with it. Bob’s Red Mill is the kind of company we need to see more of, but unfortunately don’t. I love their almond flour, Hazelnut meal, and coconut flour. As an Outward Bound alumnus, I have fond (though distant) memories of chilly mornings scarfing down bowls of granola, and can’t wait to do so again.

    Thanks for the recipe! I am in no way gluten intolerant but since January of this year have removed most gluten from my diet because of inspiration from my best friend. She is gluten intolerant and me, being an avid baker, wanted to prove to her that you can still eat wonderful baked treats without getting sick. My 7 month conversion in baking has been challenging (and fun!) and I have to say that I really enjoy Bob’s Red Mill brownie mix–it works great for stuffed brownies! I also have tried the almond meal, xanthan gum, white rice flour, tapioca flour & GF oats.

    Well before i went low carb, I loved Bob’s pancake mix. Now I use the almond flower, coconut flour and I think I have some xanthum gum…I haven’t tried that to thicken yet…but heard it can be used for that. I will have to try that for gravy! This recipe looks fabulous! I Can’t WAIT to try it!

    I am a diabetic who had gestational diabetes during my third pregnancy. However, I like Bobs’ Red Mill on FB because that is the least of my challenges. My two daughters are vegan and one is sensitive to Pnut Butter and the other is allergic to Sundflower Seeds. Now they are a challenge to cook for. Especially since one is prediabetic and the other is hypoglycemic it is a real challenge to keep them full of protein under their dietary constraints.

    Almond Flour. I haven’t tried very many yet – 3 to be exact. But I had found some low carb (happen to be GF) recipes. I had every intention of making MY OWN almond flour for weeks and weeks (and weeks). And I could not make the two recipes I wanted to try w/o it. Finally, one day, by chance I found myself in a Whole Foods and standing right in front of the almond flour and coconut flour – and I thought. forget about it. BUY the almond flour to see if your recipes are as great as you thought you may never get the stupid homemade almond flour !!!! And they were. And I still can’t find time to try to make it, so I bought the coconut flour too and just got another almond flour. !!

    I am a husband and honestly do most of the cooking. I am very health conscious so I also make random baked goods involving protein in some form or another. I wish I could comment on Bob Mill’s products but the truth is I have never used them, either way this looks incredible to take to the trails or on a bike ride.

    I battle severe Fibromyalgia/CFS and have found that following a low carb diet helps ease the pain. I ran across your FaceBook site and have tried quite a few of the recipes there and also from this blog. Great info, which generally helps keep me curb my cravings of carbs. I use a lot of Bob’s Red Mill products. What a Blessing your site and their products are.
    Now…to find a site that sells willpower to keep me on track! :o)

        While doing the low carb, I avoid all wheat products, which of course are rich in carbs ;o( I’ve wondered also about the gluten factor. Not overly sure of the correlation of the Fibro/CFS relief via a low carb diet, as there seems to be no rhyme or reason to the peaks and valleys in their symptoms, nor could my specialist that I was referred to by Mayo Clinic. For myself, I seem to feel better for the most part while sticking strictly to the very low carb per day. I tend to use Almond and Coconut flours to replace the wheat flour.
        I have done some research to see if anyone has noticed the same relief and came up with a few docs/clinics that have wrote on the subject. Dr. Paul St Amand has stated that patients with fibromyalgia tend to have increased carbohydrate cravings and low carbohydrate diets may reduce their pain and fatigue.. http://www.ei-resource.org/articles/related-conditions-articles/hypoglycemia-%11-dr.-st.-amand/
        Hopefully, one day they will find a cure. In the meantime… ;o)

      I think this would work just fine in a dehydrator, although I dont’ know how long you’d have to do it for. I don’t soak my nuts, but I don’t see how that would hurt.

    I just made a batch of this granola and it is delicious. I only had choc protein powder so I used that. I have found that this is unbelievably good on ice-cream. I imagine it would make a great cheesecake base too…..definitely going to try that 🙂

    This was incredible! I added a healthy splash of cinnamon to mine, plus some leftover dried cranberries (recipe also from this site). I like it better than the old granola with grain and sugar! Will definitely keep this stocked in my pantry from now on; will help with days when I’m tired and not sure what I feel like eating. I also swapped out the peanut butter for almond butter since I don’t eat peanuts. Thanks!!

    Hi, I have been a lurker on your site for a few months now after searching for low carb recipe substitutes. I have PCOS and thyroid problems, and am a true sugar addict in every sense of the word. Obviously this is not a good combo…BUT you are one of the people online that have helped me tremendously with managing my health issues and food. Bob’s Mill products are an integral part of my food and sugar management, too. Right now in my cupboard I currently have the coconut flour, almond flour, xanthan gum, flax seed meal, and wheat gluten. I just bought more coconut flour two days ago (and it was sold out in the first 3 stores I went to!) so to say I utilize Bob’s Mill products is an understatement. I would love a gift card because Bob’s Mill products can be a little expensive for my family, so every little bit helps…but either way, thank you for your site, sincerely. I appreciate all the effort you put into what you do!

    This has nothing to do with the contest, but I’m printing this recipe and making it for the third time…my husband, Mr Picky Englishman, loves it! We live in Malaysia and it’s been a struggle to get ingredients–but at last we have a pretty full complement and I’m headed to California for a visit tomorrow (and bringing back loads of Swerve at long last).

    Hubby doesn’t like eating low carb, misses all his favourites, and it’s really hard to do here in rice-and-noodle land…BUT his blood sugar is under control at long last (TypeII, still on meds at the moment) and so will live with it.

    And this is one of his favourites, thank you SO very much for it!

    Finally made this today and it is yummy! I added some Hershey’s Special Dark Chocolate Chips, which gives it extra yumminess (because seriously chocolate and pb, right!?!?). I had to *force* myself to eat what couldn’t fit in my largest tupperware. I should have stayed in the kitchen while I secretly snacked because I ended up sharing this with my 5 year old (and she can chow down!!). Thank you, Carolyn, and keep up the great work!

    I put these ingredients into MyFitnessPal Recipe Builder and the nutritional data for carbs was much higher than yours. 404 calories, 12g carbs, 36g fat, 5 fiber.

      That is likely because My Fitness Pal is calculating the carbs from the erythritol. As these do not affect my blood sugar, I don’t count them and I state this clearly in my nutritional disclaimer.

        Thanks for letting me know. It doesn’t count the stevia extract but does count 12g for the entire recipe for the granulated Swerve. I removed that and it calculated to 12g carbs…closer to your 9.9. Probably a matter of brands used. I will be trying this today.

      Yes, you can use your own flax in the same amount. You can skip the whey protein if you like. The sweet drops will be fine, as will the powdered Swerve.

    We’ll took me a while to get to log a comment but I felt I must. This granola is now a staple in my house. Always ready as a quick breakfast cereal to pour a little cream/water over, add a little frozen blueberries and I’m in heaven. My son stopped by, ate it up and took a jar home with him.     Um… yeah. This stuff is dangerous. I’ve been keeping a pint jar of it in the fridge and the rest in the freezer… as if that’s somehow going to slow me down (hahaha…).     Hi! I made this today and it’s quite delicious. I didn’t have protein powder so I just added a bit of almond flour and hemp hearts to make up for it. Turned out nicely but it’s not super crunchy, but a bit soft. Wondering if this is how its supposed to be, if not, would you recommend cooking a bit longer or think its related to the protein powder?       No, it should absolutely crisp up as it sits. I don’t think the protein powder would make that much difference, you may need to have baked it a bit longer.

    I know your recipe is written with butter, but do you think coconut oil or ghee would work? I find it very annoying when someone basically wants to change the whole recipe and then asks the person who posted it if it will turn out ok. I’m definitely not trying to change it because I think it sounds amazing!!! (I just can’t do butter) My 10 year old son has recently discovered his love for granola, but as you said, lots of granola recipes are not healthy at all. Can’t wait to try this one!

When I started keto, I was following Maria Emmerich’s blog. Her stuff scared me and didn’t taste really good. When I found you I realized keto CAN look different for different people.     I’m new to Keto and am loving your blog. I just made the granola and after 30 minutes in the oven, it is still really wet. Then I watched the video and realized, the 1/4 cup water might not all be needed. I’d love to see that printed in the directions as well as the video.

      You can still save it. Keep it in a warm oven, very low temp (no more than 200F) and it should dry out/crisp up.

      It used to but I updated the recipe. You can replace half of the almond flour with flax, if you like.

    Wow!! I’ve really been missing granola. I made this yesterday and it’s GREAT! Even slightly burned (my oven is sooo hot; I really need an oven thermometer), it still tastes really good. My husband likes it, too. Next time I will be more conservative with the temp and it will be even better. Only item I changed was the protein; I used hemp protein since I don’t have whey. Hemp protein is nasty but can easily be masked by other flavors, and it turned out well with this recipe without other adjustments.. I loved how easy this was to make and how customizable it is! Thanks for yet another wonderful recipe.

    I’ve made this twice. Once exactly as written. 2nd time I used almond butter instead of PB and added hemp hearts (because I bought them and don’t know what to do with them) and cinnamon.
    Both times the granola tasted great…too good really, it was gone in days. But it never came out in big clumps like your photos or video shows. I’m wondering where I went wrong. Was there supposed to be flaxseed in this? Would that have made a difference? I didn’t see it in the recipe.

      No, I changed the recipe so no flaxseed. It should just clump, unless you are spreading it too far apart when putting it on the pan.

    Do you think it would still turn out ok without the whey or collagen? I am dairy free and I don’t care for the taste of collagen and only put it in my coffee.

    Holy moly.. this is goood.. I added a little maple extract and cinnamon.
    Used as topping to a serving of cottage cheese softned with full fat cream..
    I could hear the angels sing..

          I write recipes for them. You wouldn’t add the nut butter at all. Well, I guess you could but I am not sure how it will fare.
