Meatballs are pretty much a staple in the low carb world, and yet I don’t have a single recipe for them on my blog. Why? Well, I don’t really know. I suspect it’s because meatballs take some effort to form and make. I am inherently lazy. I like meals I can throw in the oven or saute quickly on the stove. I am far more likely to take ground meat and shape it into a meatloaf than spend the time forming perfect little round balls by hand. Also, I appear to have become the queen of low carb dessert recipes and I am very happy with inheriting that crown. Low carb baking is kind of my thing and it appears I am pretty good at it. So I have a tendency to focus my efforts in that direction.
But when I get a good idea for a more savoury recipe, I find I can hardly wait to execute it. The idea of roasting some garlic and adding it to ground chicken was a little flash of inspiration. I am sure it’s been done before. I never google my recipe ideas anymore because almost everything has already been “done”. I just go about making the idea in my own special low carb way. And the flavour of these was so good. My kids loved them and paired with some zucchini noodles, they made the perfect low carb dinner.

Sounds delicious! Speaking of meatloaf, have you made this as a meatloaf? Any thoughts on how that would be?

I have not! I think it would be pretty good but I don’t know the baking time.

I rely on meatballs quite a bit, but I agree they can be time consuming. I have a low carb and gluten free diet. I am also living with a chronic illness which makes many activites including basic cooking more than I can often manage. I need pre-prepared food that can be easily warmed up and eaten on those very frequent days when I am struggling. Pre-made, gluten free and low carb food is nearly non-existent and of course even if it were out there it would probaby contain some other evil and unhealthy substances. So on days when I feel up to it I make large batches of food and one of the things I make is a big batch of meatballs. Sometimes my mum makes them for me. Thank you for reminding me to make chicken meatballs. I haven’t made them in years.

Oh boy, that condition makes it tough. We do the same, we make huge batches of things and freeze them. Soups and stews are some of the best for that.

These were super easy to make, made a lot, and everyone loved them. I used a 1.5 tablespoon cookie dough scoop and I think I got 48 meatballs. They’re actually more like chicken nuggets than meatballs to me.
For leftovers, I cut them into quarters and had them with salad and ranch dressing – yummy!
Next time I make them, I’m going to freeze most of them after the baking step, then just fry them after thawing. That way I don’t have to eat them every day for a week.
Oh, and I used our deep fat fryer instead of a frying pan, much less mess.
For a short cut, I’m also going to use purchased garlic paste instead of roasting my own. It doesn’t seem to matter much mixed into a recipe and it cuts at least an hour off the prep time.
