Delicious low carb paleo chicken meatballs with roasted garlic. Eat as an appetizer or make it a full dinner by serving over zucchini noodles or mashed cauliflower.
Meatballs are pretty much a staple in the low carb world, and yet I don’t have a single recipe for them on my blog. Why? Well, I don’t really know. I suspect it’s because meatballs take some effort to form and make. I am inherently lazy. I like meals I can throw in the oven or saute quickly on the stove. I am far more likely to take ground meat and shape it into a meatloaf than spend the time forming perfect little round balls by hand. Also, I appear to have become the queen of low carb dessert recipes and I am very happy with inheriting that crown. Low carb baking is kind of my thing and it appears I am pretty good at it. So I have a tendency to focus my efforts in that direction.
But when I get a good idea for a more savoury recipe, I find I can hardly wait to execute it. The idea of roasting some garlic and adding it to ground chicken was a little flash of inspiration. I am sure it’s been done before. I never google my recipe ideas anymore because almost everything has already been “done”. I just go about making the idea in my own special low carb way. And the flavour of these was so good. My kids loved them and paired with some zucchini noodles, they made the perfect low carb dinner.
