Schar Gluten Free Products (Samples!)

Not all of the recipes I create for this blog are gluten free, but I have toyed with the idea of going completely gluten free for a while now.  I don’t have any obvious signs of gluten intolerance, but I have to wonder about how it might be connected to me developing diabetes.  I have an aunt who has Celiac Disease, and there is a correlation between diabetes and Celiac.  And lately, gluten is being fingered as a possible culprit in many other health issues, from chronic inflammation to excema to other allergies.  My gluten intake has become drastically reduced because of my low carb diet, but it’s definitely still there, and I am curious what might happen to my glucose levels if I eliminated it entirely.  But it’s tricky to go gluten free when the rest of your family eats bread and other wheat products on a regular basis.  I need to try to work on their gluten consumption as well, but I have a feeling they won’t go without a fight.  My husband takes two sandwiches to work every day, my rapidly growing son eats toast for breakfast and sandwiches for lunch…you get the picture, I am sure.

My husband was immensely pleased when I told him that the Schar samples of rolls and baguettes were on their way.  He loves sandwiches, and considers himself something of a “sandwich artiste”, but with all the news about gluten’s adverse health effects, he’s been wondering about how to cut back on it himself.  We have a panini maker that hasn’t seen much use since I’ve cut back on carbs and gluten, and he’s eyeing the Ciabatta rolls for some interesting panini.  And since soup weather has arrived, I think I will use the baguettes for delicious soup and sandwich meals for the kids.  I have to say, I have more ideas of what to do with the products than I know what to do with.  I will share what we made with them in a future post so be sure to stop back in for that.

I will be trying a little of the products myself, so I can report back on their taste and texture.  I am also very curious to see how they effect my blood glucose levels.  They aren’t low carb per se, but a half serving of a product that contains no gluten may be well tolerated by me.  We shall see!
