Low Carb Strawberry Hand PiesSummer goes by far too quickly, and it only seems to get faster and faster with every passing year.  Here we are in August already, which means summer is more than halfway through and the school year will is creeping up.  I went to shopping the other day because I needed some more t-shirts and tanks, and I could barely find any.  They were all tucked away in the clearance section, with only odd sizes left in each colour, while the racks were filled with heavier clothes already heralding the change of seasons. I am simply not ready for this!  I feel this way every year, but I want to hang on to summer and enjoy it a bit more.  I want to go to the beach and run through the sprinklers with my kids.  I want to grill out and eat al fresco and sip cold drinks on the patio.  Of course, I can still do all of this for a few weeks yet, but it already has that sense of rushing by me and slipping away before I can catch my breath.

Low Carb Chocolate Raspberry Gelato

One of the best parts of summer is the availability of so many fresh foods.  Our growing season is pretty short up here in New England and I always try to make the most of summer produce.  I am sure I’m not the only one, I bet plenty of you are cramming in all the fresh goodies while you can!

    I use swerve in almost all my baking, especially cheesecakes. I have lost 33 lbs over the last year on a low-carb diet and enjoy learning how to change up family favorites to lo-carb versions to keep my family healthy. With a large family, would love to win those 6 bags of swerve and the mixer for my cauliflower/potato recipes.

    I made a cheesecake last week that I make occasionally; the recipe calls for Splenda, but I substituted Swerve to see if there was any difference. After dessert, my sis-in-law asked me what I’d done differently because the taste was so much better!. She said she can always taste the artificial sweetener in my cheesecake, and wondered if I’d gone off my diabetic diet! Thank you, Swerve!!!

    Pretty neat! I use my current (kinda elderly, not so cool as a kitchenaid one) hand blender for mashed cauli mostly, and soups too! I love swerve, too, so this would be really cool to win!

    I would make more Strawberry Handpies and Samoa Bars…. along with waffles to stock my freezer with. Do you have any idea when there will be more confectioner’s Swerve back in stock? It’s been out of stock for at least a few days on the swerve website and the price was inflated last week on amazon.

    I love these hand blenders! I had a nice one but it broke 🙁 I love the attachments like the chopper. I use it all the time to chop small amounts of nuts, etc. instead of hauling out a food processor. This one looks like it has a cup attachment so just being able to make a single smoothie with it will be great!

    Since I have been low carbing, my taste for sweet things has lessened quite a bit – – it is like my taste buds have come alive… But with Swerve, I am confident that if I need to sweeten something, I am using a safe product… I would be adding Swerve, cinnamon and toasted chopped pecans to softened cream cheese to use as a spread for my Muffin in a Minute…. yummy…..

    Swerve is my all time favorite sweetener, I buy 6 to 12 bags at a time! I like the confectioners the best, then I don’t have to grind it for recipes. We love cinnamon coffee cake and cheesecake!

    I have only just started reading this blog, and so far only tried 2 recipes. I tried the broccoli cheddar soup, which requires a blender, and I don’t have one…so I had to use my tiny 4 cup food processor (resulting in a giant mess). Would love to have this blender to help on those kind of recipe experiment days!

    There’s too many recipes to choose from! I’m saving up for an ice cream maker, and the cookie dough ice cream recipe blew my mind, and made me realize how much I NEED that machine!

    Anything chocolatey with peanut butter, like those popsicles you’ve recently posted (I saw them last night and realized that though I have popsicle makers from IKEA, I might need a few more molds for those..) are my go-to sweet. Another favorite is some low-carb granola mixed into a light nut butter cream (for which I use Justin’s brand, and my favorite flavor of all is the vanilla almond).

    I am diabetic, and would love to see more recipes that use Swerve as the “natural” sweetener, such as Coconut Pie, Fudge Pie, Carrot Cake, 7-Layer Bars, and my favorite Cream of Coconut Cake (the one where you punch holes in it to pour the Condensed Milk, and Cream of Coconut in).

      It’s not draconian at all! It can be incredibly indulgent, although you do have to be careful you don’t go overboard. But it’s so high fat and filling, you usually aren’t tempted to overeat.

      At home, this would be very tricky. Working milk solids into chocolate requires some heavy duty equipment to not end up with an awful, gritty texture.

    We had a large family party this weekend and I made your Nanaimo Tart (with Swerve), and I think that it is my favourite low carb dessert! Because you are enthusiastic about Swerve I ordered both types on line (wish that they had a brown sugar substitute too), and they have worked well in everything I have made, and best of all, no “tummy” troubles. I do have a question though, which I emailed Swerve, but no answer yet…perhaps you could advise me Carolyn? “I purchased both granular and powdered Swerve and have been very happy with both of these products. I find that the powdered Swerve dissolves more easily, and wonder if there is any application in which the granular would be superior, or could you just use powdered for every recipe? It would be more convenient to just stock one type, but if a recipe called for granular, how much powdered would you use? The powdered seems to have more volume for the same weight of granular, so I’m thinking that you would need to use more of it”. Winning the hand blender would be awsome, but I would be thrilled with just the Swerve prize!

      Hi Kathy – They are usually so good at answering questions but you know what? This is the kind of question they would send my way anyway! 😉 Here’s my answer…the granular is going to be best in recipes that depend on the crystalline structure. For example, cake recipes where you cream the butter with the sweetener, because that helps whip small air bubbles into the butter before adding other ingredients. The powdered won’t do that so you will end up with a slightly heavier product. Typically, you can sub them 1 for 1 (even if the volume and weight are a little different). I do this a fair bit when I am running out of granular. I also find that the powdered seems to have more fiber and can over-thicken things a bit. I’ve used it in caramel and didn’t like the end result as much as the granular.

    Swerve is my favorite sweetener! I use Swerve daily making fresh jam, cupcakes, cookies, muffins, puddings, and especially cold treats! I use Swerve to sweeten delicious coconut milk (or organic cream) lime sherbet, chocolate, cherry, vanilla, peach, or nectarine ice creams and popsicles. Just a little touch of Swerve enhances the flavor in all my frozen treats. One of my favorite all time treats is your condensed milk. Swirl a little heavenly dark chocolate in a couple of tablespoons of homemade condensed milk, (caramelized condensed milk works too),and drizzle over a microwave GF LC Swerve sweetened cupcake in a minute for an easy dessert. Taste testing the chocolate sauce is mandatory prior to topping the cupcake, just leave enough to drizzle.

    My mom and I used to make a recipe from Pampered Chef for Broccoli Bars. It had a biscuit crust with a mayo/sugar/apple cider vinegar sauce and was topped with broccoli, bacon, sunflower seeds, and gold raisins. I’d love to swap out the sugar for the Swerve and use the hand blender to mix it all together so I could make little personal size servings instead of a huge batch.

    I just learned that I have a gluten intolerance and found an article about you in a diabetic magazine. I love your recipes, they have made the transition much easier.     I would love to make some Dairy Free Sugar Free Salted Caramel Ice Cream using Brown Sugar Swerve for the caramel swirl and the ice cream base. I have used white granulated SWERVE and use it all the time, but I would love to try the powdered and the brown sugar types.

    I love Swerve and would use it to make apricot and plum jam. My stock is getting low with all your wonderful recipes. I have to admit that I have to lower down the quantity of it because my tolerance for the mint aftertaste seems to be not as good as you.

    I would love to try swerve. I am in need of a new sweetener for my coffee. The sucralose gave me headaches and the Stevia takes away the flavor. I also am in need of the 5 Speed Hand Blender as I am new to being Gluten Free and need it for making all of the delicious recipes I’ve been bookmarking to make.

    I’ve just gone low-carb/gluten-free at the advice of my physician within the past few weeks. I’m struggling a little, mostly because I’m a (now former) self-professed sugar junkie.     Just the other day I checked Swerve’s web-site to learn a little about their sugar substitute. The sugar substitute I presently use does not meet with my (or my husband’s) taste. I will have to order it as our health food companies do not carry it…maybe I can change that! : )

    I love your site and ideas, and I want to try Swerve but it isn’t sold in my area. Finding out I have Celiac disease and my husband is diabetic has led us to a low carb/gluten free lifestyle, and many of your recipes (especially the Raspberry scones) have been a wonderful addition to my cooking repertoire.

    I would use the Swerve to make low-carb strawberry shortcake and the hand blender to whip farm-fresh cream to go with it. Yum!

    I have been loyal to Kitchenaid brands for years. I especially enjoy using my Kitchenaid blenders to make delicious smoothies. I’m actually ordering some more Kitchenaid blender parts
    parts so that I can produce ever more great foods and drinks!
