Keto Baked Oatmeal

Keto oatmeal is the perfect breakfast for chilly mornings! This easy baked “oatmeal” is hearty and delicious, with only 2.7g of net carbs per serving!

• Flaked coconut     unsweetened • Sliced almonds • Swerve Brown • Collagen peptides • Baking powder • Cinnamon • Salt • Butter • Heavy whipping     cream • Egg • Maple extract or     vanilla

In a food processor, grind  coconut and almonds until they resemble flakes of oatmeal. Transfer to a large bowl.

Whisk in the sweetener, collagen, baking powder, cinnamon, and salt.

Add butter, cream, egg, and maple extract and stir until well combined.

Spread the mixture in a greased 1-quart glass or ceramic baking dish

Bake at 325ºF for 20 minutes, until golden brown and the center is mostly set.
