Keto Beef Stew

This keto beef stew is made in the classic style with hearty chunks of beef and vegetables in a rich broth.

• Beef stew meat  • Olive oil • Onion • Celery • Rosemary • Tomato paste • Garlic • Red wine • Beef broth • Zucchini • Turnip • Carrot • Glucomannan

Pat beef dry and season with salt and pepper

In a large Dutch oven brown the stew meat in hot oil and reserve.

Add onion and celery and sauté until tender. Stir in rosemary, tomato paste and garlic and cook until fragrant.

Add wine and cook until reduced by half. Stir in broth and bring to a simmer.

Add the beef and any accumulated juices back into the pan.

Cover the pot with a tight fitting lid, transfer to a 325ºF oven and  cook for 1 hour.

Stir in zucchini, turnip and carrots. Return to the oven and cook for 30 minutes until tender.

Push meat and veggies to the side and whisk glucommanan into the liquid. It will continue to thicken as it sits.
