Keto Chicken Soup

This Keto Chicken Soup recipe is a healthy take on the classic Greek Avoglemono soup. Light, full of fresh flavor, and only 5.3g net carbs per serving.

• Olive oil • Onion • Salt and pepper • Chicken broth • Bay leaf • Cooked chicken • Cauliflower rice • Lemon juice • Egg

Sauté onions in olive oil and season with salt and pepper. Cook until onions are translucent.

Add broth and bay leaf and bring to a simmer. Add chicken and cauliflower rice and simmer until cauliflower rice is just tender.

Whisk together the lemon juice and the egg.

Slowly add some of hot broth into the lemon-egg mixture. Then slowly whisk the lemon egg mixture back into the pot.

Discard the bay leaf and adjust seasonings to taste.

Serve with lemon slices and chopped fresh parsley.
