Mashed Cauliflower

Think mashed cauliflower can’t rival mashed potatoes? This cauliflower puree with sour cream and cheddar is so rich and creamy, your tastebuds will be singing.

INGREDIENTS NEEDED: • Cauliflower • Garlic • Sour cream • Cheddar cheese • Salt and pepper

In a large pot, cover cauliflower garlic cloves with water and cook until cauliflower is fork tender, about 7 to 10 minutes.


Drain thru a sieve and shake to release as much moisture as possible. Let it sit a few minutes to drain fully.


Transfer florets and garlic to a food processor and add sour cream. Puree until smooth, scraping down sides of the bowl.


Return puree to cooking pot and add cheddar, salt and pepper. Set over low heat and  stir until smooth.
