Pork Medallions with Mushroom Sauce

These juicy pork medallions are pan-seared and served in a creamy mushroom sauce. It’s a delicious keto dinner recipe that’s easy for any occasion.

• Pork tenderloin  • Salt and pepper • Avocado oil • White wine • Butter • Mushrooms • Garlic • Rosemary • Heavy whipping   cream

Place pork tenderloin slices between sheets of waxed paper and gently pound with a meat mallet to about ½ inch thickness.

Season lightly with salt and pepper.

Pan sear both sides of pork slices in a large skillet until nicely browned.

Deglaze the pan with wine or broth. Allow to cook until most of the liquid has evaporated.

Sauté mushrooms in butter. Cook until golden brown and add the garlic and rosemary.

Reduce heat to low and stir in cream. Cook until sauce thickens.

Return browned pork and any accumulated juices to the pan. Add additional salt and pepper to taste.
