These creamy smoked salmon rolls are wrapped in cucumber for a wonderful low carb appetizer or snack. You may want to eat the whole tray!

Ingredients
8ouncescream cheesesoftened
6ouncessmoked salmonminced, if you have the sliced variety
Juice of one lemon
1tablespoonminced fresh dill
½teaspoonkosher salt
½teaspoonfreshly ground pepper
1English cucumberends trimmed and very thinly sliced lengthwise (using a mandolin works best)
1 to 2tablespooncapers
Additional sprigs of fresh dill for garnish
Instructions
In a medium bowl, combine cream cheese, smoked salmon, lemon juice, dill, salt, and pepper. Mash together using a fork until well combined.
Place 1 tablespoon of filling at the end of each slice of cucumber. Add a few capers and roll up tightly. Secure with a toothpick if necessary (many of them just stick together well on their own).
Garnish with a small piece of dill and another caper.
