Pat the pork chops dry. Melt one tablespoon of the butter and brush over both sides of the chops. Then sprinkle both sides with salt and pepper.
Place the chops on the air fryer rack and cook at 400F for 10 minutes. Flip the chops over and cook for another 8 to 10 minutes, until the chops register 140F on an instant read thermometer. Remove to a platter and tent with foil.
Place the remaining butter in a medium saucepan over medium heat. Let melt and then continue to cook until the butter become a rich amber brown, about 4 minutes. Watch it carefully to avoid burning.
Remove from heat and immediately add the chopped sage. It will sizzle and crisp in the hot butter.
Serve the pork chops with the browned butter and sage spooned over top.
Notes
*I've actually done this with both boneless and bone-in chops, and both work well. Get chops that are a 1 inch thick, with a nice rind of fat on them. Bone-in chops can sometimes be a lot bigger, so two of them might be enough to serve 4 people. Bone-in chops also take a little longer to cook. The chops you see featured in this recipe are about ½ pound each before cooking, with no bone. Storage Information: You can store any leftover pork chops in an air-tight container in the refrigerator for up to 3-4 days. You can also freeze pork chops for up to 6 months.
