2sea bass filets(6 to 8 ounces each - the ones from Fulton Fish Online are long thin filets from the whole fish, already cleaned and deboned.)
Salt and pepper
2sliceslemon
1tablespoonchopped parsley
Instructions
Preheat oven to 425F and place butter in a 9x13 glass or ceramic baking dish. Place the dish in the oven to melt the butter.
Meanwhile, combine hazelnuts, salt, pepper, garlic powder, and cayenne in a food processor. Pulse until mixture resembles coarse crumbs with a few bigger pieces of hazelnut.
When the butter is melted and bubbly, remove from the oven. Pat the sea bass dry with paper towels and lay them, skin-side down, in the pan. Spoon some of the melted butter from the pan over the filets and sprinkle with salt and pepper. Sprinkle with the filets with the hazelnut mixture, pressing lightly to adhere.
Squeeze the lemon slices over the fish and then lay the slices on top. Bake 12 to 15 minutes, until fish is no longer opaque and flakes easily with a fork. Remove and sprinkle with chopped parsley. Spoon the butter from the bottom of the dish onto the filets after you plate them.
