4ozsliced deli hamchopped (I left mine in slices, but it may be easier to cut the rolls if the ham is chopped up)
½cupshredded cheddar cheeseI used 1 cup and it was clearly too much
1tablespoonmelted butter for brushing
Instructions
Preheat oven to 325F.
In a large bowl, whisk together almond flour, whey protein, baking powder, garlic powder, salt and xanthan gum.
Stir in eggs and butter until dough comes together. It will be quite sticky.
Turn out dough onto a large piece of parchment, and then pat into a rough rectangle.
Top with another piece of parchment and roll out to about 10x8 inches. Peel off top piece of parchment paper.
Sprinkle ham and cheese evenly over dough, leaving a ½ inch border.
Carefully (very carefully!) roll up dough from one long side. Pinch seam together. If your dough cracks as you roll it, you can patch it up afterwards.
Option 1: Bake the whole log as is and slice afterwards by moving parchment paper onto baking sheet.
Brush with melted butter and bake 25 to 27 minutes, until lightly browned. Let cool before slicing (it will hold together better).
Option 2: Cut log into ½ inch slices (you will get 12 to 15). Place on parchment-lined baking sheet and re-shape into more round slices.
Brush tops with melted butter and bake 22 to 25 minutes, until lightly browned. Let cool on pan.
