So after bringing you ice cream recipes all week, I felt honour bound to counter that with a healthy vegetable recipe. Because after all, man cannot live on ice cream alone. You need to sit down and eat your veggies like a good boy or girl and then you will get dessert. Your body needs the nutrients and vegetables will make you grow big and strong. So it is my duty to get you to eat your vegetables. Oh, who am I kidding? You’re an adult (well, most of you are adults) and you can decide for yourself what to eat. I just happened to think of a great recipe and so I made it. And it was seriously delicious and worthy of posting on the blog. That’s the only good reason to take a break from ice cream, right? Because as delicious as ice cream is, other food is pretty tasty too and that’s reason enough for me. Especially when it includes bacon.
I dreamed up this dressing months ago and it’s been hanging around in my brain for a while until I decided what to actually pair it with. The reality is that it would be good with pretty much anything. I mean, it’s bacon dressing, right? It would be delicious with any sort of salad and even tasty drizzled over grilled meat or veggies. Heck, you could even drizzle it on your ice cream if you were so inclined (I do not necessarily recommend this!). Or you could spoon it directly into your mouth (this, on the other hand, I might just recommend!). I considered a number of possibilities but decided it would be delicious on roasted broccoli.
And boy, was it ever! Roasting broccoli is always good, but toss it with a little low carb bacon vinaigrette? Priceless.
