Since I already outlined the whys and wherefores of the ketogenic diet in my big cookbook, I kept Easy Keto Dinners focused on the subject at hand: making your life as easy as possible. To that end, I discuss all the ways you can cut down on prep-time and cooking, so you can spend more of your precious time with your loved ones. Everything from how to thaw meat quickly to your best options for store-bought sauces and other ingredients.
I really had a blast writing this book. As a busy mother of 3 with a thriving home business, I need easy keto dinner recipes too! I really put myself through my paces, figuring out the best ways to cut corners without sacrificing flavor or healthfulness. Many of these recipes became quick family favourites.
And for those of you who avoid dairy…you’re in luck! At least 50% of the recipes in the book are dairy-free or have dairy-free options. Many are egg and nut-free too.
Keto Skillet Meatloaf
Now this particular recipe didn’t make the cut for Easy Keto Dinners, but only because I came up with it after my manuscript was already in to my editors. But it’s a pretty good example of what you might see in the book. It’s easy to put together, it uses simple cooking techniques, and total cooking time is less than 30 minutes.
And it’s full of great flavor that the whole family loved…winner winner, keto dinner!
Cheddar Jalapeno Skillet Meatloaf
Ingredients
- 2 lb ground meat I like a mix of beef and pork but you can do all beef
- ½ cup almond flour
- 2 jalapeños minced
- 2 garlic cloves minced
- 1 teaspoon cumin
- 1 teaspoon salt
- ½ teaspoon pepper
- 1 ½ cups shredded cheddar cheese divided
Instructions
- Preheat the oven to 375F.
- In a large bowl, combine the ground meat, almond flour, jalapeños, garlic, cumin, salt, pepper, and ¾ cup of the shredded cheese. Use your hands to mix well together.
- Spread the mixture evenly in a 10-inch oven-proof skillet (cast iron is best). Sprinkle the top with the remaining shredded cheese.
- Bake 25 to 30 minutes, until the loaf is firm and the center reaches 160F on an instant-read thermometer.
- Remove and let cool a few minutes before slicing. Serving with toppings like sour cream, chopped cilantro, and guacamole.

So delicious. I’ve made it twice already. This time I didn’t have any pork to add. I used 73/27 ground beef mix. I don’t usually like that much fat, but it was on sale. This mix leaves a lot of fat in the pan, but it did make for a more moist meatloaf. I might keep it on hand just for this recipe. Thanks for another terrific recipe.

Wow! So tasty! My 9 year old daughter was skeptical because she said lots of people don’t like meatloaf… After trying it, she asked why people don’t like meatloaf and that they must be crazy! I also loved how crazy easy it was! It was a hit for the whole family and will definitely be in my regular rotation.

I picked this recipe because it was quicker than most meatloafs and it was super tasty! I used plant based ground, added in diced mushrooms and onions and an egg. I also just used regular flour. Worked out just fine!

I don’t have a cast iron skillet. Would I need to adjust cooking time if I used a meatloaf pan or some other type of pan?

Seriously, I’ve made it 3 times … the first time I made this, I ate the whole thing … didn’t even share with hubby (who is not LCHF). Last week, I made this for our son and family. He texted me twice before calling to say (one again) how great this recipe is. He absolutely love it! Yesterday, I gave this meatloaf to a family (husband, wife, mother-in-law); the wife has had surgery and can’t be on her feet for long. When we got to services last night (in front of 4 other men), he loudly proclaimed how terrific this meatloaf is and that they HAD to have the recipe! My husband is so proud when people love my cooking and thinks I’m being humble when I say I’m not a great cook, I’ve just got a few great recipes I know that’s true for me, but how do you stay humble when you create the recipes??? Any chance that there will be e-editions to your cookbooks in the future? I keep all my recipes online due to travel, and I’ve hesitated to order only because I’d have to manually enter them on my computer. The bulk of my recipes come from your website! I really appreciate the wonderful recipes you have provided over the years.

If you are using your computer for the bulk of your recipes, check out the “Paprika” APP. It lets you download almost every recipe with the click of one button. It includes the ingredients, recipe instructions and notes, a picture of the dish and a title for easy reference, You can sort the recipes you save into any kind of labels or folders that work for you.
Having said that, I don’t buy too many cookbooks due to space limitations, but the Everyday Keto Cookbook has not left my kitchen since I bought it! Oh my gosh! Great information. Delightful writing style. Gorgeous and inspiring pictures. Easy to follow recipes. Tasty and varied recipes. Love it!
