Lamb is my jam, have I ever told you that? I’ve loved it ever since I was a kid and I still love it today. I possibly love it more today than I did as a child, because I now know the true range of delicious healthy meals that can be made with lamb. Now I think far beyond the basic lamb chop to see its versatility as a meal. Warm comforting stews in winter, lamb roasts in the spring for Easter, and lamb on the grill all. summer. long. Rich and flavourful, it’s the perfect fuel for all of your summer adventures.
I certainly hope you are having some adventures this summer. Ours started off with a bang, when we hit the Lost Lake Campground near Mt. Hood in June. We got the kids out and about, hiking up the steep switchbacks to the Lost Lake Butte so we could view “The Hood” up close and personal. It’s breathtaking up there and I was impressed with all my children making the climb up and back down. It was hot when we got back to our campsite, so we grabbed some floaties and chilled on the lake for a few hours (and I do mean chilled because that water is COLD!). The following morning, we hiked the perimeter of the lake itself, getting in a little exercise before the ride home.
The following weekend was just before July 4th and we were at a loss of what to do with ourselves. I knew we could easily let the weekend slip away from us just hanging out at home but I also knew my kids needed fresh air and exercise to really be happy. As much as they complain and say they just want to hang around, it’s better for all of us to move. So we did something we’d never done before and rented the Biketown bikes (owned by Nike, it’s a system of bikes all over the city that you can rent for a few hours), and rode around the waterfront for 9 miles. None of my children had ever been on that long a bike ride and they did great! Especially since it required riding on the road in some places, but they followed my lead and did so well. And then we came home and threw these delicious spinach feta lamb sliders on the grill for dinner. It was the perfect post-activity feast.
I think it goes without saying that I am an active person and I always feel best when my day includes at least a little exercise. And I KNOW my kids are happier and more easy to be around when they’ve been active too. According to the American Lamb Board, I fit the profile of the Fit Foodie perfectly and I have to say I agree. But I also definitely fall under the Outdoor Adventurer profile too.

Spinach & Feta Lamb Sliders
Ingredients
Lamb Sliders:
- 2 lbs ground lamb
- 8 ounces frozen spinach thawed and squeezed dry
- ½ cup crumbled feta
- 2 cloves garlic minced
- 1 ½ teaspoon salt
- 1 teaspoon black pepper
Cucumber Mint Sauce
- ½ medium cucumber grated
- ½ cup Greek yogurt
- 10 mint leaves finely chopped
- ½ teaspoon ground cumin
- ⅛ teaspoon cayenne pepper
- Salt and pepper to taste
Instructions
SLIDERS:
- Preheat the grill to medium high.
- In a large bowl, combine the lamb, spinach, feta, garlic, salt and pepper. Mix with your hands to combine well and form into 16 small slider patties.
- Grill the patties for about 3 minutes per side. Let rest a few minutes before serving.
- Serve on lettuce wraps or your favorite low carb rolls (I used Soul Bread Rolls for this)
SAUCE:
- In a medium bowl, combine the cucumber, yogurt, mint, cumin, cayenne and salt and pepper. Mix well.
- Serve over the sliders or on the side.

Do you have to use lamb? Or can you use something else?

You can use beef. Turkey too but it will be drier and you need to cook accordingly.
