This light and easy low carb Greek Shrimp recipe is a wonderful summer meal. Enjoy it al fresco with your friends and family.
Don’t you hate it when gorgeous new cookware just shows up on your doorstep? I mean really…who needs all those beautiful shiny stainless steel pots and pans anyway? Who wants that stuff cluttering up their kitchen, making it easier and more fun to cook wonderful low carb recipes? Certainly not this girl. I hate to cook. I hate to eat. I really don’t like to think about food at all, if I can help it. It’s just such a nuisance, don’t you think?
Oh wait, wait a second. This is All Day I Dream About Food and I’m the nut job who loves to cook and bake and really does dream about food all day. And one of the glorious benefits of my job is that shiny new cookware really does arrive on my doorstep for me to review. And one of the benefits of being a follower of the nut job who loves to cook is that this same shiny new cookware from Lagostina might also arrive on YOUR doorstep too!
I don’t say yes to a lot of review products anymore because quite frankly, it’s not always worth my time and energy. But the new Luminosa 11 piece cookware set from Lagostina really looked so good, I couldn’t pass up the opportunity to try it out. I admit that the price point gave me pause. It’s a very reasonable $199 at Bed Bath and Beyond, which actually sounded a little too good to be true for a whole set of good cookware. But I have one lovely Lagostina soup pot already and I know it’s good craftsmanship so I thought I’d see how this whole set held up.
I am happy to report that my fears were unfounded. It not only LOOKS the part, with those unique hammered lids, but it plays the part too, being very durable and of high quality. It has real heft in your hand, which is one of my telltale signs of good cookware. It has a the 3-ply bonded base with stainless steel inside and out, and since it’s oven and broiler save up to 500ºF, it can go straight from stovetop to oven. The brushed cooking surface is made of premium grade stainless steel and the stay-cool handles are riveted on for extra durability. Picking it up, you simply feel that you have a good pan in your hands.
Okay, so that’s how it feels…how does it actually cook? I have a very powerful gas stove and that was the real test. I had another set of stainless steel cookware that I never felt lived up to the heat of my stove. Things were always sticking to the bottom and burning onto the sides. So I was impressed when the Lagostina sauté pan heated evenly and cooked evenly, with no sticking or burning. I also tried it out on my little single induction burner and it heated beautifully there too.
I was asked to create a summer seafood meal that could be enjoyed al fresco so I chose an old favorite, Greek Shrimp, and gave it a delicious low carb makeover. This recipe was perfect for testing out the pots, as you use both the stove and the oven. Lagostina is well known for its beautiful design so it really does go from stove to oven to table without skipping a beat. Truly perfect for enjoying your meals al fresco.
Easy Keto Greek Shrimp
Ingredients
- 3 tablespoon olive or avocado oil
- 2 cloves garlic minced
- 1 cup canned diced tomatoes undrained
- ¾ teaspoon salt
- ¾ teaspoon black pepper
- ½ teaspoon red pepper flakes
- 1 ½ lbs medium shrimp peeled and deveined
- ½ cup freshly grated parmesan
- ¾ cup crumbled feta cheese divided
Instructions
- Preheat the oven to 375F.
- In a large oven-proof saute pan, heat the oil over medium heat until shimmering. Add the garlic and sauté 30 seconds. Stir in the tomatoes, salt, pepper and red pepper flakes and bring to a simmer. Cook 5 minutes.
- Lay the shrimp in a single layer over the tomatoes and sprinkle with the parmesan and ½ cup of the feta. Place the pan in the oven and bake until the shrimp is pink and cooked through, 10 to 15 minutes.
- Remove and sprinkle with the remaining feta and some fresh chopped parsley. Serve over cauliflower rice or zucchini noodles.

My favorite meal alfresco is simple, a well seasoned medium rare steak and horiatiki (Greek village salad)! Love, love love this meal during the summer. I even occasionally indulge in a glass of red wine to go with it!
