We started baking yesterday and will have at least 2 baking days before Christmas. I made a keto pumpkin cheesecake, a keto pumpkin casserole, a cranberry pecan cheese log and over the weekend will make a keto pecan pie.

Happy Thanksgiving to you as well. I love your recipes and am decided betweeen several what to have for Thanksgiving dessert. I would never have made it through this diet without your recipes. Going to bake cookies for the Christmas visit to our daughter’s. Our granddaughters love the cookies and keep them from getting to “high” on sugar. And they don’t even know the difference!

I saw a tip about using xantham gum. Have you ever tried using it by mixing it fires in a little oil? I think you use glucomannan but I only have xantham in the house right now. TIA
