Healthy low carb muffins with the sugar-free Nutella baked right in! A fun keto breakfast the whole family will love.
Have I ever mentioned how much I love Nutella? Have I ever mentioned how much I love muffins? Oh, I have? Well let me just mention it again because I love them both and I really, really love them together. I am something of a muffin-aholic and I seem to have passed this addiction on to my family. I almost always have a big batch of low carb muffins on the go. With hungry kids and a hungry husband, it’s almost an imperative. They are easy to make and on busy mornings, I can toss one at each of my kids, knowing I am getting something decently healthy into them. Now that they are getting older, it’s no longer quite enough to fill them up, so we often do a scoop of peanut butter with them as well.
But lately, I have been on quite a Nutella kick. Of course, it’s not really Nutella. No way, no how. While that stuff tastes like it’s made with hazelnuts and chocolate, it’s mostly made of sugar. Of course, I know you savvy low carbers are not surprised. And I know you know it’s pretty easy to make a really good, healthy chocolate hazelnut spread at home. What is surprising to me is that it really doesn’t seem to require that much sweetener to taste good. I find 2 tablespoons worth of Swerve to be sufficient for a whole batch. And my kids love it. Seriously LOVE. IT. There is usually a battle over who gets to scoop out the very lasts drippings from the blender when I am done whipping it up.
So this recipe combines both of those loves in a fun little treat. As you might expect, my kids when gaga for them and I’ve made them several times already. While homemade sugar-free Nutella doesn’t get nice and gooey when it’s baked into things (boohoo!), it still makes for a fun little breakfast treat. And a great way to send my kiddos off to school, happy and healthy!
