My local Kroger store is Fred Meyer, and I love their in-house Simple Truth brand. It offers competitive prices on a great many healthy and organic food items and natural household items. And with the digital coupons, I found I could load up on some of my go-to ingredients: grassfed beef, organic cheese, nuts, chicken, coconut oil, eggs, etc. There are also quite a number of other brands in the digital coupons, ones that we low carbers use frequently (Silk and So Delicious, among others). So if you have a Kroger store near you, this is definitely a cost-saving measure! (Participating stores include: Kroger, Fred Meyer, Fry’s Food Stores, QFC, King Soopers, Ralphs, Smith’s, Dillons, Bakers, Gerbes).
I’ve been doing this healthy low carb thing for quite some time now, and my trick is to still include sweets and treats, provided that they fit the low carb lifestyle. There something about that little taste of dessert that caps off my day and makes me feel satiated. So with some of my Fred Meyer goodies, I set about making over a classic, Pecan Tassies, into something I could eat and feel good about. Until recently, I had no idea what tassies were. Really they are just kind of little pecan tart that uses cream cheese in the crust. I have a longstanding love affair with pecan tarts and pies, so making a healthier sugar-free version was just what the doctor ordered.

Mini Pecan Tarts
Ingredients
Crust:
- 2 cups almond flour
- ⅓ cup powdered Swerve Sweetener
- ½ teaspoon salt
- 6 tablespoon butter melted
- 3 ounces cream cheese cut into chunks
Filling:
- ½ cup chopped toasted pecans
- ¼ cup butter
- ⅓ cup powdered Swerve Sweetener
- 1 teaspoon Yacon syrup or blackstrap molasses
- 2 tablespoon Sukrin fiber syrup (optional, helps with gooeyness)
- 1 teaspoon vanilla extract
- 2 tablespoon whipping cream
- 1 egg
- ¼ teaspoon salt
- 24 pecan halves
Instructions
Crust:
- Preheat oven to 325F.
- In a large bowl, whisk together the almond flour, sweetener, and salt. Stir in the melted butter. Add the cream cheese and cut in with a sharp knife or pastry cutter until the dough looks unified and comes together easily.
- Roll the dough into 24 balls and press into the bottom and up the sides of a mini muffin pan (if your pan is not very non-stick, you may want to grease it first). Bake 10 minutes.
Filling:
- Fill the tart crusts with about 1 teaspoon of chopped pecans.
- In a small saucepan, melt the butter over low heat. Once melted, stir in the sweetener, Yacon syrup, fiber syrup, vanilla extract, and whipping cream until well combined.
- Whisk in the egg and salt. Divide mixture evenly among tarts. Top each with a pecan half and bake another 15 minutes.
- Let cool 15 minutes before removing from the pan.

Unfortunately I don’t think we can buy neither Yacon syrup nor blackstrap molasses where I live (or online). What does it bring to the flavor profile or texture that the fiber syrup doesn’t provide?

It gives is more caramel flavour and colour. But it would be just fine if all you have is the fiber syrup. Especially the golden one.

Omg omg omg! Thank you, thank you, thamk you! Pecan Tassies are my faaaaaaaavorite!.. and the main reason I gained 5lbs this Christmas 🙁 I never even dreamed they could be made low carb. My local Kroger stores are King Soopers. When I run out of the organic eggs that I get at Costco, I can always run up the street to my King Soopers and buy their Simple Truth eggs, knowing that the chickens are treated well, and run around cage free. It is getting so much easier to eat low carb and paleo than it use to be, thank you King Soopers for carrying an ever expanding selection of organic items. I love pecan pie, so this recipe looks great. I do have a couple of questions, however. Since you have Erythritol in the mix, can I deduct the sugar alcohol grams from the carbs along with the fiber grams? If so, there should be NO carbs in the Net Count, right? Also, can I substitute sugar-free maple syrup for the Sukrin fiber syrup? I just recently found your site and look forward to trying your recipes. No, the net carbs has already subtracted out the fiber and the erythritol. I don’t add erythritol carbs in anyway, I just list them for people’s knowledge.
