Sushi roll in a bowl! This low carb cauliflower rice salad has all the great flavors of your favorite sushi in a much healthier, lighter package. It’s the perfect summer side dish.
If you follow this little blog of mine, you will know that I get no greater satisfaction than taking an old family favourite and making it over to be low carb and gluten-free. Most of the time, those makeovers involve chocolate. Lots and lots of chocolate. And maybe some peanut butter too. But sometimes I decide to tackle recipes that used to make it into our regular dinnertime rotation. This is the story of one such recipe. The sushi roll salad that we loved so much back in the day and that we had to give up when I adopted a low carb way of life.
My sister in law is the one who discovered the original recipe on Epicurious. She served it to us one warm summer evening up in Maine and we were instantly in love. I couldn’t possibly count the times I made this recipe myself. Over and over, every summer, all summer long. I took it to every potluck and BBQ and it was a hit with everyone who ever tasted it. I gave that recipe out more than any other. And its popularity makes perfect sense…all those great sushi flavours without the trouble of making it into perfect little rolls.
The only wonder is why it took me this long to make a low carb version. I just didn’t quite believe that cauliflower rice would live up to the sticky sushi rice of the original. But it did. Oh man, did it ever. The flavours were just as good as I remembered and the texture was lighter and less clumpy. I made mine with Trader Joe’s frozen organic cauliflower rice, but you can easily make your own cauli rice in a food processor.

Can’t wait to try this! Just one question, though: I have rice vinegar on hand that contains no sugar. If I used it instead of the apple cider vinegar, would I still use the sweetener? Thank you!

As a total wimp, I just thought I’d ask – is the accompanying wasabi sauce super spicy, or more mild? I actually enjoy wasabi, but a little goes a loooong way for me, ha!

Oh gosh!! I will definitely make this rice! I used to love this with additional raw tuna or salmon and some cream cheese cubes! I will try it with this variation! Thank you for posting this recipe!
