Grease a 9-inch springform pan and line bottom with parchment paper and wrap in foil.

In a large bowl, beat cream cheese and butter until completely smooth. Then beat in powdered sweetener until well combined.

Add sour cream, lemon zest, and vanilla extract and beat until smooth.

Beat in eggs until just barely combined.

Pour batter into prepared pan and smooth the top. Tap pan gently to release any air bubbles.

Set pan inside a large roasting and pour boiling water into roasting pan until it reaches halfway up the sides of the springform pan.
